Mexican Shrimp Ceviche Cup
Ingredients
Shrimp
1 lb (450g) cooked shrimp, chopped (reserve some whole for the top)
1 cup fresh lime juice (about 6–8 limes)
½ cup fresh lemon or orange juice (optional but recommended)
Veggies & Mix-ins
1 cup diced tomato
½ cup diced red onion
1 small cucumber, diced
1–2 jalapeños or serrano peppers, finely chopped
1 medium avocado, diced
¼–½ cup chopped cilantro
Sauce (optional but common)
½–1 cup Clamato or tomato juice
2 tbsp ketchup
1 tbsp hot sauce (Valentina, Tapatío, or your favorite)
Salt & pepper to taste
Garnish
Lime slices
Extra cilantro

Instructions
1. Marinate the shrimp
In a bowl, combine chopped shrimp with lime juice (and lemon/orange juice if using).
Let sit for 10–15 minutes to absorb flavor.
2. Prepare the vegetables
Dice tomatoes, onions, cucumber, jalapeños, and avocado.
Add them to the shrimp bowl.
3. Make the sauce
Stir in Clamato/tomato juice, ketchup, hot sauce, salt, and pepper.
Mix well until it becomes a juicy, ceviche-style mixture.
4. Combine everything
Fold ingredients together gently (don’t mash the avocado too much).
Taste and adjust lime, salt, or hot sauce.
5. Assemble
Fill a clear plastic cup in layers: shrimp mix → whole shrimp → cilantro.
Repeat until the cup is full.
Top with whole shrimp and a lime wedge.
6. Serve
Chill for 10–20 minutes for best flavor, or enjoy immediately.
