The boys were adamant about requesting breakfast for dinner, specifically bacon (honestly, they would have been happy with just bacon). It felt like that commercial with the dog searching for "Beggin'" strips. To add a little more consistency, I did eggs, bagels, and the like.
I, however, had envisioned something way more awesome and nutritious: a lox bagel. The prep was a breeze; I used half of an everything bagel, hollowing out some of the interior to fit more veggie cream cheese. Then I added capers, spinach, tomato, a ton of pepper, and smoked salmon. The result was ridiculously delicious and healthy. To supplement this masterpiece, I threw in about 1/3 cup of Great Value 4% milk fat cottage cheese and more tomato. I'm not ashamed to admit I'm obsessed with freshly ground coarse pepper.
