🍓 Keto Strawberry Lemonade Cake
Moist Low-Carb Summer Dessert (Sugar-Free)
This Keto Strawberry Lemonade Cake is a refreshing low-carb dessert combining bright lemon flavor with naturally sweet strawberries. Made with almond flour, sugar-free sweetener, and fresh citrus, it’s gluten-free, keto-friendly, and ideal for summer gatherings, picnics, or meal prep.
🧾 Ingredients:

•2 cups almond flour
•½ cup powdered erythritol or monk fruit sweetener
•1 tsp baking powder
•¼ tsp salt
•3 large eggs
•⅓ cup melted butter or coconut oil
•¼ cup fresh lemon juice
•Zest of 1 lemon
•1 tsp vanilla extract

•¾ cup fresh strawberries, finely chopped
•1 tbsp powdered erythritol
💛Optional Lemon Glaze
•½ cup powdered erythritol
•1–2 tbsp lemon juice
👩🍳 Instructions:
1️⃣ Preheat oven to 350°F (175°C). Line an 8-inch round pan with parchment paper.
2️⃣ In a bowl, whisk almond flour, sweetener, baking powder, and salt.
3️⃣ Add eggs, melted butter, lemon juice, lemon zest, and vanilla. Mix until smooth.
4️⃣ In a separate bowl, toss strawberries with 1 tbsp sweetener.
5️⃣ Pour batter into the pan and evenly scatter strawberries on top.
6️⃣ Bake 30–35 minutes, until the center is set and edges are lightly golden.
7️⃣ Cool completely. Drizzle with optional lemon glaze before slicing.
