When you are trying to eat healthy during the holidays....

You can still make a healthy dinner during the busy holiday season. Roast any vegetables with some olive oil in the oven for about 15-20 minutes on 425. Stir occasionally. Season with sea salt and pepper. I sautéed some frozen cod on the stove with a little butter and seasoning and added some ready-made rice. My favorite rice is Archer Farms Basmati or Brown Rice from Target. It heats in the microwave in 90 seconds. I keep it on hand when I don't have time to cook my own.

Yum!

Try this smoothie. It is heavenly!

One cup almond milk
about 3/4 farm fresh blueberries
about 1/4 cup frozen pineapple
1/2 a small avocado
sweeten with stevia if needed

Blend ingredients in a blender. Serves one.
