BALSAMIC PORTOBELLO BURGER 🍔

This hot weather has made me not want to be in the kitchen, but outside on the barbie. So I fired up the BBQ and made these portabella burgers.

These beauties take about 25 minutes from start to finish and are definitely a comfort-foodie-meaty dish.

The marinated portabellas in balsamic vinegar are ah-mazing as a stand-alone but when served with homemade sweet potato fries and garlic aioli - it just sends this meal over the top.

Make sure to top it off with:

+ lettuce
+ tomato, sliced
+ red onion, sliced
+ avocado
+ dill pickles
+ ketchup, mayo, mustard

Serve with a big ass salad and sweet potato fries.

SUMMAC HUMMUS

I am in love with the spice sumac, a middle eastern spice with a tangy flavor and a hint of citrus. 🍋

(You can easily substitute paprika, the traditional hummus spice, in this dish if you dont have sumac on hand.)

SUMAC HUMMUS
+ 1 - 15 ounce can of cooked chickpeas, drained and rinsed
+ ⅓ cup raw tahini by
+ 2 tablespoons extra-virgin olive oil (I ♥️ )
+ 2 tablespoons fresh lemon juice, more to taste
+ ½ teaspoon cumin - optional
+ 1 garlic clove
+ ½ teaspoon sea salt, more to taste
+ 5 tablespoons water, or as needed to blend

OPTIONAL GARNISHES
+ sumac or paprika
+ curry roasted chickpeas
+ tomatoes
+ red onion, minced
+ olives ()
+ extra-virgin olive oil
+ parsley or mint

FOR SERVING
+ veggies and/or warm pita bread

Place all ingredients into a high-speed blender adding water as needed to blend, and blend until you have reached your desired consistency.

Transfer to a serving plate, top with desired garnishes and serve. 🌱

What better way to start off the week than by eating a little slice of the rainbow?

Try out this beautiful CRUNCHY SALAD with TAHINI DRESSING for lunch, dinner or even as a side dish to accompany your favorite meal.

I really love it because it is not only pretty to look at, but is full of flavor texture, and color. 🌈

CRUNCHY SALAD 🥗
+ 1 cucumber, chopped
+ 1 carrot, sliced
+ 1 bell pepper, seeds removed and chopped
+ 1 cup purple cabbage, sliced
+ 1 bunch kale, de-stemmed and chopped
+ 3 sprigs mint, leaves torn
+ 2 green onions, sliced

TAHINI DRESSING
+ 1/8 cup extra-virgin olive oil
+ 1/8 cup tahini
+ 2 tablespoons lemon juice, to taste
+ 1 teaspoon Dijon mustard
+ 1 teaspoon maple syrup or honey
+ 1/4 teaspoon fine sea salt
+ fresh ground black pepper, to taste
+ 1 tablespoon cold water, more as needed

Whisk dressing ingredients in a bowl, taste, and adjust as needed.

Place salad ingredients in a large bowl, toss with dressing and enjoy.

SALMON SLIDERS WITH LEMON GARLIC ALIOLI 🍋

Preheat the oven to 425. Line a baking sheet with natural parchment paper.

Mix all ingredients together in a bowl, form patties about 2 inches in diameter and place on your lined baking sheet.

Bake in the oven for 8 - 10 minutes.

Serve with Lemon-Garlic Aoili, lettuce, sliced onions.
