It has been a bit (almost three years - wow) since our last post, but since joining some wonderful groups for moms, I've been inspired to share some ideas that make cooking FUN and EASY - as it should be! I want to share an old recipe of one of our most popular dishes. This was my grandma's recipe, who obviously spent more time cooking than on her penmanship! This is such an easy recipe and you can make it today and freeze it for your Thanksgiving meal. Skip the cans of cranberry sauce (you'll probably end up throwing most of it away anyway) and impress your mother-in-law with this 5 minute dish. Here is the recipe:
Cranberry Relish
1 Bag of Fresh Cranberries
2 Oranges
4-5 red apples, unpeeled
1 1/2 cup Sugar
1. Wash cranberries and discard any bad berries.
2. Core and apples and cut them into quarters.
3. Partially peel the oranges (or, peel one and leave the other unpeeled) and cut them into quarters.
4. Using a food processor, add all of the fruit and pulse it until pieces are about 1/4 inch.
5. Remove from the food processor and add the sugar (let the sugar dissolve before serving for at least 10 minutes).
THAT'S IT! It's so easy and delicious! You can use less sugar or more sugar, depending on your preference. Try adding pineapple or walnuts. Eat it as is or add it to vanilla yogurt for your Black Friday Breakfast. Make it this weekend, throw it in the freezer, pull it out on Wednesday and let it thaw in your refrigerator and you've got one dish done!
