I aim to include all three macronutrients (carbs, fat, protein) in my meals and at least two out of the three in snacks to build a balanced lifestyle. I also incorporate as many fermented foods & fruits/veg as I can for gut health! gotta keep the good gut bacteria happy :)

it only takes about 15-20 minutes of prepping vegetables and rice in the beginning of the week to have a nutritious grab-and-go option. this is also so versatile and unique to anyoneโ€™s taste & nutrition needs!

I prepped:

โ€ข rice: carbs
โ€ข black beans: protein & fiber
โ€ข corn: fiber
โ€ข tomato: fiber & micronutrients
โ€ข onion: fiber & micronutrients
โ€ข peppers: fiber & micronutrients
โ€ข guac cups: fat & fiber
โ€ข olives: fat & fiber

a big life update over this past month! I officially have my B.S. in Biology Pre-Health with a minor in Yoga Studies from UNCW! I graduated with honors and Summa Cum Laude. I also received the โ€œBest Biology Honors Posterโ€ at the CSURF Showcase in April! I am so grateful for all of my professors, family, and friends that hav supported me in this journey. Iโ€™m also so beyond grateful and excited for my next steps at to pursue my MPH/RD!
