All the greens! Spinach, roasted kale + broccoli and avocado, topped with sardines and a spoonful of sauerkraut on the side ( ). I only had a few minutes today so used a dressing - Maple Dijon, and it was a delicious, low FODMAP honey mustard alternative, with a short, natural ingredients list ✌🏻A great ready made dressing to keep in the fridge for emergencies!

I’ve always got a snack in my bag..it’s one of my strategies for avoiding that ‘I’m so starving I’ll eat anything moment,’ especially when travelling and not knowing when and what food I’ll have access to.

I just got back from a weekend away in Nashville and got through all of these. They’re yummy and all officially Low FODMAP CERTIFIED. Chocolate Peanut butter is my fave...of course.

Today’s - spinach, sauerkraut, roast broccoli, avo, feta and sunflower seeds for some crunch...with a sweet turmeric dressing. YUM!

I never used to make my own salad dressings. I thought that was way too complicated..but now I’ve started I’m not going back! This one took me one minute to make.

SWEET TURMERIC DRESSING - just mix together the following:
- 1 tbsp EVOO
- 1 tbsp ACV
- 1 tsp maple syrup
- 1/2 tsp turmeric

This 3 ingredient healthy pudding is so easy and so delicious...who needs someone else to fall in love with?!

INGREDIENTS (makes 2 puddings):
- 1/2 can (200ml) full fat coconut cream
- 1 tbsp maple syrup
- 1 tbsp cacao powder
---
HOW TO:
- Whisk the coconut milk in a bowl for 5 - 10 minutes (or less if you have an electric whisk) until it becomes thick and pudding like
- Add in the maple syrup + cacao and whisk for another 2 minutes
- Empty into pots and enjoy!!
