After working as a clinical dietitian in a hospital since 1990, I opened Sound Bite Nutrition in 2008 to focus my professional life on wellness versus illness.I work with both individuals and groups to provide engaging, personalized nutrition education and counseling. I have experience in small and large companies providing nutrition lectures, cooking demos, health coaching and wellness programs. I enjoy doing grocery store tours as well as media events.I am not a perfectionist and don't believe in ridiculously stringent or fad diets. Clearly, if you have celiac disease, you can't have gluten! β›ͺ️ A client of mine who works at a church asked if I'd do a hands-on class for a small group of kids.

πŸ”ͺπŸ”ͺ "We don't have enough knives for them" but they can mix and measure.

πŸ₯£ We moved tables and got mixing bowls and measuring cups and spoons for 12 kids.

πŸ₯— The kids were all eager to learn about the salad ingredients we used and taste new foods.

πŸ§‘β€πŸ§‘β€πŸ§’β€πŸ§’ The parents tried it, too!

πŸ’πŸŠπŸ― 🍎They made a spinach salad with apples, dried cherries in an orange honey dressing. It was a hit!

πŸ₯ΉπŸ½οΈ I'm so grateful to have opportunities to teach nutrition through simple recipes.

πŸ€·πŸ»β€β™€οΈHow would you know you if you liked spinach if you never tried it?

πŸ₯¬ Dietitians nerd out when they see kids try new foods-especially greens!

Recipe below:
Salad:
1 (10 oz) bag baby spinach
1 honey crisp apple, chopped
1/3 cup sunflower seeds
1/3 cup dried cherries
1/4 cup feta crumbles

Dressing:
3 Tbsp canola oil
Juice of 1 orange
2 tsp balsamic vinegar
2 tsp honey

Add the salad ingredients in a large bowl.

In a separate bowl, combine the dressing ingredients and whisk.

Drizzle the dressing over the salad and toss.

Enjoy!

🍣 This weekend I paired leftover grilled salmon with mixed greens, a few tomatoes, a hardboiled egg and a simple dressing.

πŸ‹ Lemme tell you, it was the very zest!

πŸ₯—These leftovers provided:

β€’ Vitamins and minerals
β€’ Omega-3 fatty acids
β€’ Brain food
β€’ Deliciousness

πŸ₯ž ISO of a tasty way to enjoy a high-protein breakfast?

🍌 This banana oatmeal pancake by is so a-peeling.

πŸ₯š The OG recipe includes:
β€’ 1 ripe banana
β€’ 1 egg or 2 egg whites
β€’ 1/2 cup rolled oats

I added:
β€’ 2 Tbsp skim milk
β€’ 1 scoop of plant protein

Directions:
1. In a medium bowl, mash a ripe banana.
2. Add oatmeal, milk, the egg and protein powder.
3. Mix to form a batter.
4. Heat a large skillet for 1 minute, then spray with non-stick spray.
5. Pour the batter in the pan and wait for the batter to get bubbly, about 3 minutes.
6. Flip the pancake when the edges are firming up and cook until done.

πŸ₯œ Then top it with 2 Tbsp natural peanut butter.

🍴πŸ’ͺ Protein count 30 grams to promote satiety and support muscle mass.

⏰From start to finish, I'm eating in less than 15 minutes.
