I get this question a lot since Nova is plant-based, so here’s what a typical day looks like. I’m literally this girl’s personal chef because I don’t trust store-bought food or restaurants to uphold the high standards I have for her nutritional needs.❤️

What helps is that most of her meals are fruit-based, so there’s not a lot of cooking involved outside of her dinner meal.

If you have a toddler or young children, this time is imperative to shaping their relationship around food when they get older. Kids will eat what you give them. They will normalize what you normalize. Every time Nova tries a new fruit or vegetable, she ends up loving it immediately.

Her sea moss comes from .african.seamoss - the only company I trust to make the gels up to standard (made by me of course lol) and the elderberry syrup is an organic brand I purchase from a local farmer’s market.

And if you need plant-based meal ideas, my cookbook has over 80 plant-based recipes to choose from. Just cut the meals up in smaller pieces or blend in a food processor if your baby/toddler isn’t chewing yet 🤗

In light of Passover season and the Feast of Unleavened Bread, I wanted to share one more recipe we will be keeping on repeat - especially since this one is completely guilt-free 😊🤗

Unleavened Blueberry Loaf Cake

Ingredients: 3 cups spelt flour, 1 flaxseed egg, 1 cup coconut sugar, sea salt (pinch), 1.5 cups cashew/almond milk, 1/2 cup avocado oil, 2 tbsp fresh lemon juice, 2 tsp vanilla extract

For icing: 1.5 cups raw cashews (soaked), 1/2 cup fresh red dragon fruit, 1/4 cup maple syrup, 1/2 cup almond/cashew milk, and 1 tsp vanilla extract

Instructions:

1. Preheat oven to 350 and add spelt flour, coconut sugar, flaxseed egg, sea salt, almond/cashew milk, avocado oil, lemon juice, and vanilla extract to a mixing bowl. Stir until well-combined.

2. Transfer loaf mix to a loaf pan (lined with parchment paper). Bake for 50-55 minutes, or until toothpick comes out clean.

3. To a small blender, add soaked cashews, dragon fruit, maple syrup, vanilla extract, and almond/cashew milk. Blend until smooth.

4. Allow loaf cake to cool for 20 minutes, then spread icing evenly across the top and add any additional toppings of your choice. For me, I added more blueberries and lemon zest 🤗

Ever had black lentils? 👀 This recipe will blow your mind!

Easy Black Lentil Curry Recipe ⬇️

Ingredients: 1 cup dried black lentils (pre-cooked), 1/4 cup black beans, 1 onion (diced), 4 roma tomatoes (diced), 3-4 cloves garlic (minced), 2 inch piece of ginger (grated), 2 tsp ground coriander, 2 tsp cumin, 2 tsp curry powder, 1 tsp turmeric powder, 1/2 tsp chili powder, pink Himalayan salt (to taste), coconut milk (15 oz can)

Pre-cook black lentils and set to the side.

In a skillet, add avocado oil, onion, ginger, and garlic, then simmer for 5-6 minutes. Next add in the coriander and cumin and cook for an additional minute before adding in the tomatoes.

Allow this to cook for 5 minutes, then add 1 cup of water/vegetable broth, curry powder, turmeric, chili powder, pink Himalayan salt, black lentils and black beans. Bring to a boil, then allow to simmer for 20 minutes, uncovered and stirring occasionally.

Add the coconut milk, heat for a few more minutes, then serve immediately.

Add this vegan lasagna soup to your dinner line-up and you won’t regret it 😉❤️ Full recipe below 👇🏾

Ingredients ⬇️

1/2 tbsp avocado oil, 1 small onion (diced), 1/4 cup red pepper (diced), 1/4 cup yellow pepper (diced), 1/4 cup green pepper (diced), 4 garlic cloves (minced), 1 tbsp italian seasoning, 1 tbsp onion powder, 1/2 tsp paprika, sea salt (to taste), black pepper (to taste), 1-2 tbsp East African Sea Moss, 1/2 cup dried red/brown lentils, 5 cups vegetable broth, 1/2 cup coconut milk/cashew cream, 1/2 cup tomato sauce, 1 tbsp tomato paste, 5-6 lasagna noodles (broken), 1/4 cup nutritional yeast, 1 tbsp lemon juice, vegan ricotta for garnish, fresh parsley for garnish

Instructions ⬇️

1. Sort and rinse lentils under water, then set aside.
2. ⁠Heat oil in large pot over medium heat and saute’ the onion and garlic until translucent - then add diced peppers and cook for an additional 2 minutes
3. ⁠Add the spices, lentils, tomato sauce, tomato paste, coconut milk/cashew cream, and vegetable broth. Stir and bring to a boil. *Stir frequently to prevent cashew cream from sticking
4. ⁠Next, add broken lasagna pieces to the pot along with nutritional yeast, East African Sea Moss, and lemon juice, then continue cooking for about 9-10 minutes, until noodles are al dente.
5. Add more seasonings if need be, but the dish is ready to be serves immediately. Garnish with parsley and vegan ricotta cheese.

*Leftovers will thicken, so feel free to add more water or vegetable broth when reheating.
