This is hands down one of my favorite vegan comfort meals to make. Because the polenta aka grits is made from corn, I only recommend eating something like this very sparingly 🙏🏾 Full recipe below ⬇️
Creamy Polenta Grits
Ingredients: 1 cup organic yellow polenta, 2 cups almond milk, 1 cup spring water, 2-3 tbsp nutritional yeast, pink Himalayan salt (to taste), 1/2 tbsp garlic powder, 2 tsp dried parsley, 1 tbsp avocado oil
Bring almond milk and water to a boil in medium-sized pot, then slowly whisk in 1 cup of polenta. Bring heat down to simmer and while stirring, add in the nutritional yeast, garlic powder, parsley, pink Himalayan salt, and avocado oil.
Seasonings for the oyster mushrooms are garlic powder, onion powder, cayenne pepper, smoked paprika, pink Himalayan salt, and dried basil.
Make sure to coat your pan with avocado oil (adding more as needed) and cook your mushrooms long enough (about 25-30 minutes) on medium-low to achieve the crispy texture 😉
