14 days detoxing and I wanted to make sure my first cooked meal was something light, but delicious. So Curried Chickpea Soup it is ☺️ This is also perfect for toddlers - Nova absolutely loves this meal ❤️
Ingredients: 2 cans chickpeas, 3-4 cups cooked quinoa (optional), 1/2 red onion (diced), 2 carrots (diced), 2 celery ribs (chopped), 2 tbsp minced garlic, 1 can coconut milk, 2-3 cups vegetable broth, 1 cup diced sweet potatoes (optional), 1 tbsp garlic powder, 1 tbsp onion powder, 1 tbsp curry powder, 2 tsp dried thyme, 1 tbsp dried basil, 2 tbsp avocado oil, pink Himalayan salt (to taste)
Rinse and drain chickpeas and cook quinoa as directed, if using.
Heatbavocado oil in large pot over medium heat and once hot, add minced garlic, onions, and curry powder. Sauté for 5 minutes.
Then add in the carrots, celery, chickpeas, all seasonings, and vegetable broth. Bring to a boil, then cover and simmer for 15-20 minutes.
Next add in coconut oil and quinoa, if using. Cook for an additional 2-3 minutes. Serve immediately. 😊
