Crockpot Pork & Sauerkraut
Great Low Carb Recipe for New Year’s and Beyond:

•Use a 3 to 4 lb pork loin roast and season with salt & pepper
•Quickly sear pork in one tablespoon of cooking oil until it is lightly browned. Transfer roast to the crockpot.
•Use sauerkraut with its juice (bagged or jarred)
•Pour Sauerkraut over the pork then seasoned with salt and pepper.
•Optional: cut up one medium onion or two medium sliced apples - add to crockpot
•Cook the pork on high for 3 1/2 to 4 hours.
•Pork is ready when thermometer reaches 145 degrees
•Slice up the pork and serve the sauerkraut

Low in carbs at 10g along with 6g of fiber per one cup of Sauerkraut & Pork

Baking with almond flour for lower carbs?

Substituting almond flour with a 1:1 ratio of regular flour can work. However, almond flour has more moisture than regular flour. Add more almond flour or add egg for protein to bind that extra moisture.
