CRANBERRY SAUCED TURKEY
Pantry: Cornstarch (1. t), olive oil 1 (T), Low sodium soy sauce (1 T), Cranberry-orange sauce (1/2 c.), Toasted sliced albums (2 T.), Ground cinnamon (1/8 t.), cooking spray.

Refrigerator: Orange juice (1/4 c.), Turkey tenderloin steaks (1 #)

1. Oven: Preheat to broil.
2. Bowl: Add soy sauce and oil, whisk.
3. Broiler pan: Spray with cooking spray. Place turkey on the pan and brush with soy mixture.
4. Broil: 4 to 5 inches from the heat for 5 minutes; turn and brush with soy mixture. Broil 4 to 6 minutes more or until turkey is tender and no longer pink.
***Meanwhile***
5. Saucepan: Add orange juice, cranberry-orange sauce, cornstarch and cinnamon; whisk.
6. Cook: over medium heat, stir until thick and bubbly. Stir two minutes more. Spoon over cooked turkey and sprinkle with almonds,.

Yield: 4 servings.

MINI MUFFULETTAS
Pantry: Rolls, whole wheat (4- 2oz.), Tomatoes, medium (2)

Refrigerator: Turkey salami, sliced (1/4 #), Turkey pastrami- sliced (1/4 #), Mozzarella cheese- sliced reduced fat (1/4 #), Mayonnaise- light (8 t.), Mustard- yellow prepared (4 t.), Olives- pimiento-stuffed sliced (4 oz.), Pickles, lettuce- leaf (4 leaves)

1. Strainer: Drain pickles and olives
2. Cutting Board: Halve rolls horizontally. Slice tomatoes. Chop pickles and olives; toss lightly on board to combine.
3. Assemble: Spread 2 t. mayonnaise on cut side of each roll bottom; and, 1 t. mustard on cut side of each roll top. Top each roll bottom with lettuce. Equally layer half of olive mixture, meats and cheese on top of lettuce. Repeat layer. Top with tomato slices and roll tops. Secure with picks, if desired.

Yield: 4 servings.

NO-FLIP FRIED EGGS
Pantry: Salt and Pepper (to taste), cooking spray, water (2 t.)
Refridgerator: Eggs (8)

1. Skillet: Spray with cooking spray; heat over medium heat until hot. Prepare eggs in two batches, adding to the skillet 4 at a time.
2. Cook: When whites are set add 1 t. water; cover and cook to desired doneness (about 2 minutes for soft or 4 minutes for firm). Repeat method for remaining eggs. Sprinkle with salt and pepper.

Yield: 4 servings
