1 tbsp olive oil
1 onion, diced
2 garlic cloves, minced
1 medium butternut squash, peeled & cubed
1 carrot, chopped
3 cups vegetable broth
ยฝ cup coconut milk
Salt, pepper, and nutmeg to taste

1. Sautรฉ onion and garlic until soft.
2. Add squash, carrot, and broth. Simmer 20โ25 minutes.
