Happy Thursday everyone!

I am currently obsessed with this Greek inspired pasta salad! Loaded with whole grain pasta, garbanzo beans, lots of wholesome veggies, and a drizzle of tasty basil chili oil. Finally a lunch that I feel great about getting a second (maybe even a third 😉 🤤) serving of!

Whole grain rotini pasta
Garbanzo beans
Chopped fresh spinach
Diced bell pepper
Quartered cherry tomatoes
Diced red onion
Sliced kalamata olives

Mix all ingredients together with a squeeze of fresh lemon juice, a spoonful of kalamata olive brine, cracked black pepper, and salt to taste. Drizzle in some basil chili oil and you’re all set! This can be stored in the fridge for an easy, ready-to-go lunch throughout the week!

Basil chili oil:
Chop some fresh basil and stir into extra virgin olive oil with a pinch of crushed red pepper flakes. This mix can hold up to a week (or longer in the fridge) and infuses more the longer it sits! This oil also works great for other pasta dishes or with sautéed vegetables like zucchini or broccoli 🥦!

I spent the last three weeks moving from DC to Dallas and can’t put into words how excited I am to finally be settled in! It feels good to be back at it, starting with this blackened tofu under a creamy mushroom and caper sauce 😋

Happy Wednesday everyone!

Often I hear that people don’t have time to eat healthy. It takes dedication and working smarter not harder to get something satisfying, quick, and healthy on the plate. It doesn’t need to be complicated or all from the farmer’s market. Buy frozen vegetables, search quick recipes, listen to your cravings and satisfy them with a healthier twist!

This 20-minute warm German potato salad was perfect for these chilly nights! Swipe right to see the progress.

✨ After the potato’s are done, I quick blanched the beans and tossed them both hot with lots of minced garlic, lemon zest, whole grain mustard, apple cider vinegar, red wine vinegar, and nice EVOO. It was the perfect topping for a bed of lemony greens 🥬!

100% vegan 100% whole foods now that’s something to smile about, inside and out 😊!

Happy Sunday everyone!

I used to be a huge fan of sesame chicken... now I am an even bigger fan of this sesame tofu with quinoa! Guilt-free and satisfying 🤤
Sauce ingredients: sweat minced ginger, garlic, and crush red pepper with a small amount of sesame oil. Add flour to form a roux (about 1 tbs per cup) and then add 2:1:1:1 parts soy sauce, rice wine vinegar, brown sugar or maple, water to the pan. Add plenty of sesame seeds and some fresh sesame oil at the end.
Firm or extra firm Tofu: press under a weight for 20 minutes to remove excess moisture. Cut into cubes, toss in sesame oil and salt, and bake at 350 until golden and crisp. Toss with the finished, hot sesame sauce.
Broccoli and onions: steamed together
By simply replacing chicken with organic tofu, this recipe is still high in protein without being fried, high in saturated fat, antibiotics, viruses, bacteria, or other contaminates found in conventionally raised meats. Replacing rice with quinoa is an easy way to reduce carbohydrates, boost fiber and protein, and get in all the essential amino acids!

What are you doing with your veggie scraps? Why not try veggie stock! It is quick, free, and so delicious 😋
I keep a bag in the freezer and once it is full... stock time! Add any spices and simmer for 45 minutes. After straining, this stock can be reduced further to make a tasty soup base for these chilly September days!
My favorite scraps: onions, parsley stems, mushroom stems, celery, carrot tops, pepper tops, garlic
My favorite spices: mustard and black peppercorns (fennel lends an anise flavor similar to a vegan Pho base!)

Just a reminder that healthy food should have you smiling inside and out. It isn’t about restrictions, shame, or undying will power. Instead, focus on all the wonderful foods that we can and should be eating in abundance! That doesn’t mean our favorite foods like pizza have to be off the table for good, especially if we can have a giant salad beside it 🍕 🥗

✨Healthy fats: avocado and sesame oil
✨Vegetables: leafy greens, tomatoes, red onion
✨Starchy vegetable: sweet potato
✨Citrus: lime and kumquats
✨Protein source: edamame
✨Nuts and seeds: sesame and peanut
✨Herbs: cilantro

Happy Taco Tuesday!
Mixing it up with a plant based chicken from ! I have used this mix for a few other chicken replacements and everything turned out great!
For these tacos, I went with a Smokey chipotle “chicken” with a
Red cabbage, red onion, carrot and broccoli slaw seasoned with lots of cumin and lime juice
Why these ingredients?
Compared to traditional tacos, that are loaded with animal based saturated fat and cholesterol, these tacos have
🌮 Lots of antioxidants from our cabbage and red onion slaw
🌮 Legumes from our plant based chicken
🌮 Raw broccoli offers great immune boosting power
🌮 Whole grain corn tortillas over processed white flour

Happy Friday everyone!
⏳The importance of cooking for now and later⌛️
✨ For now: red lentil pasta with a roasted veggie marinara and basil. Quick garlic bread (toast your favorite multigrain bread then rub with a garlic clove while still hot 🤤).
✨For later (short term): an extra serving of pasta for a quick future lunch.
✨For later (long term): three individual cups of sauce for the freezer. Perfect for another quick pasta night or to sauce any vegetables!

Getting the most out of each time you cook and always having leftovers to cycle through are both important for maintaining a healthy diet! Always leave your future self plenty of options; we all hit days where we are feeling exhausted or have no spare time and cooking is the last thing on our minds. Instead of be tempted to reach for the delivery apps or processed snacks, quick reheat leftovers can save the day!

Happy Friday!
Whats your food plans for this weekend? Starting mine off right with this delicious salad!
Corn mix: sauté poblanos, corn, garlic and tomatoes, then mix with fresh red onion, any beans on hand, and lots of lime zest and juice
Greens and avocado: light lime juice and salt
That’s it! This salad is oil free, sourcing all its fat from the avocado 🥑 and the beans provide plenty of protein, no need for meat! I love this corn mix on anything from fresh tacos and even homemade nachos 🤤
