Mediterranean Stuffed Sweet Potatoes
Simple, Satisfying & Packed with Nutrients 🌿

📝 Ingredients (Serves 2):

2 medium sweet potatoes

1 cup canned chickpeas (rinsed)

½ avocado, diced

¼ red onion, chopped

1 tbsp tahini

1 tbsp lemon juice

1 tbsp olive oil

Salt, paprika, parsley for garnish

👨‍🍳 Instructions:

Bake sweet potatoes at 400°F for 40 mins.

Mash chickpeas with tahini, lemon juice, salt.

Slice potatoes open, fill with chickpea mix, avocado, onion.

Drizzle with olive oil, sprinkle paprika and herbs.
