Here’s what you’ll need:
1.Sweet potatoes (diced)
2.Bell pepper
3.Onion
4.Garlic
5.Black beans
6.Fire-roasted tomatoes
7.Olive oil
8.Spices: chili powder, cumin, cinnamon, cocoa powder
9.Water or veggie broth

How to make it:

1.Sauté sweet potatoes, bell peppers, and onions in a little olive oil.
2.Add garlic and all your spices — that cocoa powder adds magic!
3.Pour in beans, tomatoes, and water; let it simmer until everything’s tender.
4.Serve warm and top with avocado, Greek yogurt, or your favorite toppings.

You’ll need:
1.Whole wheat or corn tortillas
2.Black beans or refried beans
3.Colorful veggies (bell peppers, corn, spinach, onions, whatever you love!)
4.Shredded cheese
5.Olive oil or cooking spray

How to make it:
1.Spread beans on one tortilla.
2.Layer your veggies and cheese.
3.Fold and cook on a skillet until golden and crispy.
4.Slice it up and serve warm, with salsa, guac, or Greek yogurt dip!
