The Lauren [content warning]
Years ago when I started playing around more with ice cream, my friend Lauren asked for a flavor. She wanted a Samoa ice cream, a deconstructed version of the Girl Scout cookie. I formulated a plan and asked for her feedback before I made it. She immediately corrected my vision and told me what she had in mind.
A coconut caramel ice cream, kind of like my salted caramel, except less salty. Toasted coconut. Chocolate pieces. And chunks of the Trefoil Shortbread Girl Scout cookies.
So I went with her vision. I handed it over to her when it was ready. A few days later I checked in. In Lauren’s words “it was perfection. Nailed it”.
While walking her sweet dog Holiday on a sunny Sunday morning in April 2020, she was fatally struck by an intoxicated driver. They were both killed instantly, minimizing any pain they may have experienced. It was a massive loss for all of us who knew and loved Lauren & Holiday. Holiday was the best and sweetest pup, who was playful and could nap anywhere. Lauren was a sassy, thoughtful, smart and funny friend. She had a great laugh.
I decided the Samoa/Caramel Delight ice cream would be called The Lauren. I’m always happy to talk through the flavor when people ask. I don’t always have the time to tell the story. And I’m thankful to share it here, with all of you who have taken the time to read all the way through. LUMI
