Heads up! We had to close early! We were down to three flavors and that limited choice feels sad. Sorry to disappoint anyone who was planning on coming in tonight after 7:30. We’re making ice cream as fast as we can. We’ll get the right flow down soon. Thank you for all the support and business today!

Added a super limited flavor today. When it’s gone it’s gone.

End of the Rainbow a.k.a Lucky Charms
Cereal milk ice cream flavored with the sweet cereal bits in a box of Lucky Charms. Finished with lots marshmallows that were painstakingly separated.

Opening at NOON today because it’s so nice and it’s the last day of spring break for most of the kids around Des Moines. Come get some!

Scoops for today, and hopefully for a few days!! I’m planing on having these until I run out of the ingredients or the end of March. There may be a surprise swap out next week. Blood orange season is waning.

Just a note. GF is Gluten Friendly. I can’t technically call items Gluten Free because they are all made in the same kitchen. The GF items have no gluten element added to the ice cream.

The Lauren [content warning]

Years ago when I started playing around more with ice cream, my friend Lauren asked for a flavor. She wanted a Samoa ice cream, a deconstructed version of the Girl Scout cookie. I formulated a plan and asked for her feedback before I made it. She immediately corrected my vision and told me what she had in mind.

A coconut caramel ice cream, kind of like my salted caramel, except less salty. Toasted coconut. Chocolate pieces. And chunks of the Trefoil Shortbread Girl Scout cookies.

So I went with her vision. I handed it over to her when it was ready. A few days later I checked in. In Lauren’s words “it was perfection. Nailed it”.

While walking her sweet dog Holiday on a sunny Sunday morning in April 2020, she was fatally struck by an intoxicated driver. They were both killed instantly, minimizing any pain they may have experienced. It was a massive loss for all of us who knew and loved Lauren & Holiday. Holiday was the best and sweetest pup, who was playful and could nap anywhere. Lauren was a sassy, thoughtful, smart and funny friend. She had a great laugh.

I decided the Samoa/Caramel Delight ice cream would be called The Lauren. I’m always happy to talk through the flavor when people ask. I don’t always have the time to tell the story. And I’m thankful to share it here, with all of you who have taken the time to read all the way through. LUMI

Hey there ! Here’s what we’re currently scooping! Changed up for a few flavors that feature Girl Scout Cookies. Added a couple classics like Pralines & Cream, Red Raspberry, and Coffee. I’ll have a new sorbet tomorrow. And a new nondairy creamy flavor by Saturday. Come get some!

Hey there all you Scoops lovers! Sundays at Scoops means a waffle cone special. Throughout the week as we’re making waffle cones there are some imperfections or accidents. So I’m giving you a heck of a deal! For $0.75 you can top your scoop with waffle cone pieces, at least half of a cone worth. Come get some!

Hey all! Updated schedule for Saturday 3/7. I’ll be opening 2 hours late so all the ice cream I need to churn in the morning will be ready for you! You’re eating ice cream faster than I can make it.

I will be open 2:00 - 9:00 on Saturday!

Being given the directive to take time off this past weekend gave me time to look through photos and reflect on February. The run up to opening was full of hard work and excitement. My friend graciously spent some time taking beautiful photos both before opening and during the soft opening. The soft launch came with unexpected snow making the shop appear like my own personal snow globe full of friends, family, and supporters enjoying the space and of course ice cream.

I received so many flowers!! Thank you for bringing more color and joy into my life! I loved to have you there in spirit.

Then opening day burst my heart wide open! So many people from various parts of my life showed up. So many loyal customers who have supported me by buying ice cream or contributing to the Kickstarter campaign. And so many people from around DSM who were just plain excited to see the shop finally open. The families and kids of all ages who ate ice cream while using the space in all the ways I imagined!

It was beautiful to see this space come alive! I am so grateful for all the positive feedback about the space, the ice cream, and the team! They did great working together and made the day a breeze for me.

Then for the graciousness and understanding that came from everyone when I was unexpectedly ill over the weekend. Thank you for everything, truly.

I’m back in the kitchen this week! Open Thursday - Sunday. Same flavors! Come get some.

Hey there ! Beth here. Not the announcement I wanted to make today, but here we are. Due to a medical emergency, we will not be open this weekend. No one is more upset about this than me. But I’m following Dr’s orders.

Opening a small business by yourself is not for the faint of heart. And listening to your body while you’re working hard to make it all happen is a real challenge. I’m going to take the weekend to recover fully rather than continue to push and prolong this revolt. We’ll be back at it next Thursday. Same menu. Then the second week March, I’m introducing new flavors including some Girl Scout cookie goodness and maybe some St Patrick’s Day fun!

I’m so appreciative of the community support and tremendous feedback I received today on our Opening Day at Scoops by Beth! I want to share more reflections and gratitude, that will come later.

I knew going into this venture I couldn’t do it without consulting with the number of friends I had in the food and beverage service industries. They provided counsel and support along the way! It was so valuable! I am taking their recommendations about a first day. Test the system, make a few tweaks, and get absolutely rocked on opening day! With the nature of making ice cream and out of respect for my process, I will not be open on Sunday.
