Hey all you Scoops by Beth fans! This is the last week with this menu. Get your fix of carrot cake, honey lavender, Rainy Day Blues, and mint lemon sorbet.

Peep our Feature Flavor of the Week “Shark Attack!” Blue vanilla ice cream with a sweet dark cherry swirl. We top every scoop with a gummy shark. This feature flavor is a nod to the 100th anniversary. The longest running student led synchronized swimming team in the nation! Impressive work from student athletes at my alma mater Theodore Roosevelt High School!

We will be closing early tonight Thursday April 23rd so I can attend the opening night of their 2026 pageant. Closing at 5:30.

Here’s what we’re currently scooping! Our friends across the way at and .dsm are hosting a shop hop this Saturday in honor of Earth Day! Pick up a passport and visit all the participating shops to get your passport stamped. Turn your completed passport in for a chance to win prizes donated by Highland Park businesses.

I couldn’t let the opportunity to make a special Earth themed flavor. Our feature flavor of the week is Earth Day is Every Day! I started with Blue Moon ice cream, which is an Upper Midwest marvel, tasting like everything all at once. I added gluten free brown butter blondies to mimic land and a slight swirl of vanilla buttercream clouds. It’s pretty good. I hope those of you who know Blue Moon ice cream think I did it justice. Come get some!

Here it is ! Flavors for April! We listened to a few voices while we determined which flavors we would make this month. Some of the neighborhood folks and people new to Scoops wanted Butter Brickle. I’ll admit, I thought it was an old fashioned request that only a certain demographic would want. Then I made my version. And it’s a classic for a reason!

I also couldn’t let go of Honeycomb. I think there would be a revolt if it disappeared. That returns with the crowd pleasing Cookies & Cream, Vanilla, and Chocolate (you should see the kids’ disappointed faces when I run out).

I made a few flavors that cry spring.

Carrot Cake: featuring a gluten free spiced carrot cake stirred into a brown butter ice cream with a ribbon of cream cheese frosting.

Rainy Day Blues: a take on the beverage created by . An earl gray tea ice cream made with tea from my friend Mary swirled with a tangy blueberry lemon compote. There’s also a nondairy version made with my oat/cashew base.

Honey Lavender: a beautiful balance of honey from Meadow Blazing Star and lavender from

Mint Lemon Sorbet: Inspired by one of the best things I tasted at the Minnesota State fair!

Hey there ! I’m not fooling you about this one! We have gluten friendly waffle cones!! I tested out a gluten free flour with the most recent batch of waffle cone batter. The team and I agree that it’s a winner!! It resulted in a sturdier come while maintaining the light texture. We’ll be switching to this for the foreseeable future. Come get one starting Thursday!

Heads up! We had to close early! We were down to three flavors and that limited choice feels sad. Sorry to disappoint anyone who was planning on coming in tonight after 7:30. We’re making ice cream as fast as we can. We’ll get the right flow down soon. Thank you for all the support and business today!
