Deliberate progress. This entire venture has been an exercise in patience. I knew when I finally received funding it was only one of the hurdles. Construction is chugging along at a steady pace. Has it taken a little longer than I originally expected? Yes. Does the lead time on materials, fixtures, and equipment change? Yes. Are we making the best of it? Yes. I am trusting the process. I know I am in good (and capable hands).
One of my mantras has been “I’d rather do it right, than do it fast.” My design team, my contractors, and my subcontractors are doing amazing work. The space is coming together beautifully. I cannot wait for y’all to see it! I know there has been lots of excitement and anticipation. I know y’all will show up in droves to get a scoop. I know we all had hopes of being open by Small Business Saturday. It looks like that will have to wait.
Construction should be finished by Thanksgiving week. It’s unrealistic for me to think I’ll pass the necessary inspections, hire and train a team, and have freezers full of product ready to scoop. I’m asking for additional understanding and patience. I will open as quickly as the process allows. I’m still crossing my fingers I will be open before Christmas. The Highland Park business district feels like magic when the community comes out to support all the small businesses. There is so much joy. I’m excited to add to that joy. All in good time.

- Shop small this holiday season, and beyond. I have been surrounded and supported by so many amazing fellow business owners. Of course I’m partial to HPOP, but shop small where you are. We’ve learned that people who shop at one of the businesses in the neighborhood usually stop into more of the others when they are walking along the safer sidewalks and subsequently buy things.
