A creamy, nutrient-packed soup perfect for cozy fall evenings in Florida.
Ingredients:
2 cups cubed butternut squash
1 cup cooked white beans
1/2 onion, diced
2 cloves garlic, minced
2 cups vegetable broth
1/2 tsp thyme
Salt and pepper to taste
Instructions:
1️⃣ Sauté onion and garlic until soft.
2️⃣ Add squash, beans, broth, and thyme. Simmer 20 minutes until squash is tender.
3️⃣ Blend until smooth and season to taste. Serve warm.
