Can you spot where the fairies hide their boots? 🧚🏼‍♀️ every day there seems to be something new to pick on my walk, it’s nice to be revisiting herbs i’ve not thought about for a while.

This time of year violets are poking their purple heads out in the hedgerows. I’ve been making tea with the leaves, alongside plantain and ground ivy to help clear a stubborn lingering cough. Very grateful for how well it worked!

Yesterday I visited the island of La Gomera, it was so peaceful and home to giant heather trees🌳 The island is in a constant state of spring, so the trees have no growth rings and no one knows how old they are.

This afternoon I went foraging and found an abundance of galium aparine (sticky grass) 🌿 it’s one of my favourite spring tonics and I can’t wait to add these juice ice cubes to my morning water! Also going to be making nettle ice cubes too over the next few days ☺️

On today’s menu- Immune Boosting Garlic and Parsley soup! 🌿This soup really packs a punch👊🏻
Garlic has a long history of being used as medicine. When suffering with a cold or infection, its immune boosting, anti-bacterial, anti-viral properties work wonders!
Parsley contains high levels of Apigenin which is both antioxidant and anti-inflammatory, which are both super beneficial when you’re fighting off illness.
The recipe for this soup is very quick and easy
Ingredients
2 chopped white onions
1 bulb of garlic, crushed
Handful of fresh thyme
Bag of fresh parsley
Tsp dried oregano
1sp turmeric
1/2 tsp chilli powder
Fresh Lemon juice
500ml Veg stock
Seasoning
Soya cream
Coconut oil

First fry the onions in coconut oil for 3 mins, add the garlic, thyme and dried herbs and cook for a further 2 mins and then add the veg stock and seasoning. Simmer for 5 minutes, take off the heat and add the parsley, lemon juice and soya cream and blend til smooth. You really don’t want to cook the soup for long.
Season to taste and enjoy! I like to have a big bowl when I feel under the weather and then follow later on with the rest.

The first batch of elderberry syrup has been made! It’s truly the most delicious herbal medicine of them all in my opinion 😍 this year I made it with fresh yarrow flowers and leaves, cloves, fresh ginger, cinnamon, elderflower tincture and Inula tincture. All together these herbs make a brilliant cold and flu remedy and preventive. I use the syrup as a cordial in hot water every day to keep my immune system in check 💚

That whip tho! Making some skin nourishing body butter with cocoa butter and a mix of calendula, borage and hypericum infused oils and rose, mandarin and bergamot essential oils🍋🌹🍊
