[Gelatin mixture]
• Combine 1/4 cup beef gelatin with 1/2 cup hot water.

[Maple syrup mixture]
• Combine 1 cup maple syrup (honey works too),
• 1/2 cup water
• 2 tsp vanilla extract
• Bring to a boil and stir continuously for 8 minutes.

Preparation
• Combine the gelatin mixture with the syrup mixture.
• Whisk for 8–10 minutes until fluffy.
• Transfer to a container and refrigerate until firm.
