Have to give a big shoutout to .atx 😋 👉see the food!!
We had an awesome night out dining at Nori. This is a 100% plant-based sushi restaurant in Austin TX. I would say the ambiance is relaxed fine dining perfect for any occasion. The food, drinks, and service were excellent! Thank you for setting up shop in Austin, Nori. Although there are so many great vegan restaurants in Austin- it’s great to have a little fancier of a spot to go to for date night! Cheers!

The recipe for the tofu broccoli quinoa bowl from last night!
My friend made me a quinoa salad with arugula a few weeks back. It was so refreshing and surprisingly filling. I’ve been trying different variations since and I’m obsessed! Thanks Michelle for the inspo!
Ingredients:
1 block Firm tofu
2 cups broccoli🥦
1/2 cup quinoa
2 handfuls arugula
1 cup micro greens
Oil-free hummus
1/2 Avocado
1 tsp cornstarch
2 tbsp coconut aminoes or soy sauce
1 lemon juiced
Salt and pepper
Tofu: preheat oven to 400 and in the meantime press out the moisture from your tofu. Cut into small cubes. Coat with corn starch and coconut aminoes. Sprinkle with salt. Bake for 40 minutes or until crispy.
Quinoa and broccoli: cook on stove top or instant pot according instructions. After quinoa is cooked add in brocolli and cover and let steam for a few minutes.
Build the bowl: Grab a handful of arugula and micro greens and fill half the bowl.
Next add the quinoa to a quarter section and fill the remaining space with tofu.
Top with hummus, avocado, lemon juice, black pepper!
Note: I gave Luke brown rice as he wanted a higher calorie bowl. Bottom left.

Thank you to all of you for your hospitality this weekend. It was a joy getting to spend time with each of you. And my goodness I’m still dreaming of all the good vegan food you fed me🤤I hope you all know how much I cherish you and can’t wait for my next visit! Much love to my LA peeps!

When I first went vegan- I thought I was going to feel restricted with what I was going to be able to eat.
🌱
I couldn’t have been more wrong!
With a little practice, a world of color opened up to me and I eat more flavorful and vibrant foods than ever before.
Seriosuly I was lucky to get one colorful food on my plate before but now I eat the rainbow in almost every meal and I love it!
I eat burritos, casseroles, tacos, meatless balls, burgers, big hearty salads with creamy tahini dressings, pizzas, ice cream, and vegan desserts made from healing ingredients.

I’m so grateful and feel healed after every meal. I’m beyond glad for the life that got to live because I actually didn’t need it!
Be free animals because I can thrive on plants! How metal is that! 🤘

☀️Weekends like this remind me to keep living out loud! It’s easy to get caught up in routine and comfort- and that’s important too. But get out there and try new things, eat well, explore, and have fun! It’s so motivating!

Build this high protein low calorie bowl tonight!!

Make your instant pot protein blend.
1/4 cup quinoa
1/2 cup corn
1/2 cup black beans
1-2 cup pinto beans
1 can crushed tomatoes
1 small red onion chopped
1 orange bell pepper chopped
2 cloves garlic minced
1 cup chopped mushrooms
Add in your favorite spices
2 tbsp Trader Joe’s umami blend
1/2 tbsp onion salt
2 dashes paprika
Salt and pepper
Add in 1 cup of vegetable broth- stir - then pressure cook 1 min. When it’s done let the pressure out safely- stir in kchopped kale and cabbage to add more nutrients and let warm a few min.

In the meantime roast your favorite high fiber vegetable. We did brussel sprouts- cooked in veg broth, coconut aminoes and more of the same spices.

On the side we have rice, spinach, micro greens and will topped it all with chunky salsa.

The progression of this delicious taco bowl I made for dinner last night!🤩 + Konas version at the end!

-Leafy greens and cabbage
-Potatoes and rice
-Stewed beans, mushrooms, and peppers
-Cilantro and micro greens
-Lime, nutritional yeast, and black pepper
-extra hot salsa

Taco bowls were the first thing I learned to make eating vegan. They are easy, versatile, filling, and delicious. Give this a try and let me know what you think!
