✨🍀 I am definitely celebrating St. Patrick’s Day today with this cozy and nourishing Old Fashioned Cabbage Soup!
Full of cabbage, potatoes, carrots and other veggies, this soup is light but filling and perfect for preparing you for a night out at the pub with some friends. Serve it with a big piece of Irish soda bread to really make a complete, festive meal!
Green cabbage is a great source of fiber and antioxidants to help keep your digestive tract healthy and cells happy. It is also high in vitamins B6 and folate, both of with are important for energy metabolism and proper nervous system functioning - talk about a powerhouse food!
Combined with all the other veggies and herbs, and this soup is one pot of immune-boosting, gut-healing goodness! Feel free to switch out the chicken broth for vegetable to make it completely vegetarian, as well. 🍲
