✨ A belated Christmas wish to you and yours from my little family. This year was even more wonderful than I could hope for with Jackson’s eyes aglow with all the twinkling lights, warm fires, and his first presents! Although he really just enjoyed munching on the tissue paper. I hope everyone’s holiday was just as magical, all our love. 🎄❤️

In the early morning hours of June 17th, at 38 weeks exactly, our son decided it was his time to join the world and our lives have since been a love filled, sleepless whirlwind of soft cuddles and diapers and already feeling the thief of time. Jackson Douglas Parks, the way we love you is unlike anything I’ve ever experienced. Being your mother is already the most challenging and rewarding thing I have done with my life, thank you for changing me in a way I never thought possible.

I am so enamored with my little family and for being the best partner I could have asked for in this, supporting me and Jackson with everything that he is and making this transition so much easier for all of us. This new season of life is seeming pretty sweet so far, I cannot wait to see our little guy grow. ✨🤍

✨February✨ was much too short and also seemed so long all at once. We had appointments, dates with friends, days snowed in, and sunshine hikes. What a month of change and new beginnings. As the flowers begin to peek their way out of the long frozen soil, I am so excited for what this new month will bring! Tim and my relationship is ever growing and evolving as our little one does the same, and we are feeling more and more prepared to take on this new challenge of parenthood. I look forward to more sunshine as the days get longer and we inch our way towards Spring, savoring every moment of this journey - even the less pleasant ones. To March, may it bring us joy and peace and lots of learning moments. ✨

✨January✨ was full of hope, despair, love, tenderness, and most of all, growth. We are continuing to prepare for our new little one to come this Summer, while keeping our eyes open to the changing world around us and hoping that our child with have a free and promising future. There have been moments of lightness and heaviness, making the small instances of joy in this past month all the more beautiful. It may have seemed to take a lifetime to get though, but a new month is here and ready for more change and new beginnings. So here is to February and the new opportunities it provides. What are you looking forward to in this new chapter? ❤️

🥢✨ The PNW has been beautiful and sunny lately, which always makes me crave light, Summer-y foods like these Ginger Sesame Noodles! I love to make a big batch to keep in my fridge throughout the week (the longer they marinate, the better the taste 🤤).
These noodles are perfect paired with your favorite protein or some crisp veggies, but are also a great snack all on their own. Be careful though, it is easy to eat the whole batch in one sitting! *Not speaking from experience or anything… 😏*
The dressing is tangy and full of flavor with a blend of vinegars and freshly grated ginger - the heat level can also be adjusted to your liking! I like mine 🌶🔥 of course!
This recipe can also be made with your favorite gluten-free or a veggie noodle to really lighten things up! 🤗

Your leftovers from the week can make the most amazing Sunday brunch!! ☕️
I whipped up this chimichurri steak omelette with baby spinach, roasted red peppers, and a bit of mozzarella using leftover steak from my meal prep this week as the main for my morning meal. I then paired it with some thinly sliced sautéed root veggies and a bit of passion fruit yogurt with chia and h**p seeds. So easy to put together and full of bright, beautiful colors!
This meal was full of great protein, fiber, vitamins/minerals and a variety of phytochemicals and antioxidants from the rainbow of produce included. I love seeing how many colors I can include in my meals to maximize the nutritional benefits I get from my food! right? 🌈

✨ It’s busy weeks like this that I am so thankful for quick and delicious recipes like this Instant Pot White Chicken Chili! We are preparing to head to Mexico on Sunday and have about a million things to get done before then - so easy, one-pot meals are my go to until then.
This chili is rich and flavorful, full of spice and creaminess. The Instant Pot makes the cooking process so simple as well, first using it to sauté and then to pressure cook so all the flavors meld together perfectly!
Rich in both protein and fiber, it will keep you full and satisfied. The mix of vegetables provides some great antioxidants, and all of the spices are quite anti-inflammatory! It is a well balanced, savory, and really, quite tasty.

✨🍀 I am definitely celebrating St. Patrick’s Day today with this cozy and nourishing Old Fashioned Cabbage Soup!
Full of cabbage, potatoes, carrots and other veggies, this soup is light but filling and perfect for preparing you for a night out at the pub with some friends. Serve it with a big piece of Irish soda bread to really make a complete, festive meal!
Green cabbage is a great source of fiber and antioxidants to help keep your digestive tract healthy and cells happy. It is also high in vitamins B6 and folate, both of with are important for energy metabolism and proper nervous system functioning - talk about a powerhouse food!
Combined with all the other veggies and herbs, and this soup is one pot of immune-boosting, gut-healing goodness! Feel free to switch out the chicken broth for vegetable to make it completely vegetarian, as well. 🍲

✨ Just reminiscing back to this totally loaded bagel sandwich I had for lunch yesterday and wishing I had another one for breakfast!
This thing was seriously the bagel of my dreams with:
• a everything bagel
• cream cheese
• smoked salmon
• butter lettuce
• red onion
• avocado
• cucumber
• and capers!
It’s creamy, smoky, and savory. The veggies pack a punch of vitamins and minerals to start your day and the salmon and cream cheese provide protein to keep you fueled.
The warm, soft bagel holding it all together is the perfect vehicle for this combination of flavors - it is a seriously great rendition of the NYC classic! Try it for breakfast, lunch, or even a light dinner on the go.

✨ It may be past Mardi Gras, but that doesn’t mean you can’t still enjoy the flavors of New Orleans right at home with this delicious Shrimp and Okra Gumbo!
Starting with the holy trinity of veggies and a deep, dark roux - the flavors in this develop to be rich and spicy. Browning the okra ahead of time is my trick to avoiding it’s sometimes slimy texture!
Using only shrimp in this dish instead of the traditional variety of proteins keeps it simple and inexpensive, and they really get to be the star of the show! Serve with some rice or another grain of your choice for a hearty and festive meal.

✨ It’s Friday, it’s sunny, and I’m craving a light and fresh meal like this Strawberry and Chicken Salad!
I love salads like this because they are so easy to put together and are full of all the nutrients you need for a healthy, balanced meal. The chicken provides lean protein, the spinach is full of iron and other vitamins and minerals, and the strawberries are a great source of energizing carbs and powerful antioxidants!
All tossed together with the creamy goat cheese, tangy red onions, and crunchy pecans and you’ve got yourself a perfect bowl. Don’t forget the champagne vinaigrette - It’s pretty killer! 🙌
