Weekend brunch dreams. Chilaquiles Rojos made extra easy in the Thermomix! Spicy, saucy, and topped with all the good stuff. Save this recipe—you’ll want it again next weekend 😋🌶️
Chilaquiles Rojos (Thermomix)
Ingredients:
• 130 g Cotija or Panela cheese
• 1 garlic clove, peeled
• 60 g onion
• 600 g tomatoes, quartered
• 225 g tomatillos (green tomatoes), quartered
• 2 small serrano chilies, stems removed
• 25 g oil
• 15 g fresh cilantro
• 2 tsp fine salt
• 800 g corn tortilla chips (fried or toasted)
For garnish: sour cream, avocados, fresh cilantro
Preparation:
1. Add Cotija cheese to mixing bowl and grate 5 sec / speed 5. Transfer to a bowl and set aside.
2. Add garlic, onion, tomatoes, tomatillos, chilies, and oil. Chop 10 sec / speed 4.
3. Add cilantro and cook 12 min / 120°C / speed 1.
4. Add salt and blend 30 sec / speed 10.
5. To serve: Place a handful (or two!) of tortilla chips on each plate, top with sauce, then garnish with sour cream, grated cheese, avocado, and fresh cilantro.
💡 Tips:
• Add a fried egg on top for a hearty touch
• No tortilla chips? Crushed tostadas work too!
• Make it healthier with baked tortilla chips, or bake them at home by cutting corn tortillas in triangles, misting them with a little oil and baking or air frying them!
