Today’s beautifully-hued breakfast smoothie enjoyed in my backyard!Smoothies are wonderful because:

🥬 you can pack SO much nutrition into one! Often more veggies than you would normally choose to eat.

🫐 they’re yummy! You can customize the ingredients to make it just to your liking.

🥕they’re easy! Toss all of your goodies in a blender and whir away. In just minutes, you have a whole meal if you choose the right combination of foods!

🥑 they’re easy on a compromised digestive system. If you’re in need of gut repair, smoothies take a lot of the work out of digesting your food and makes nutrients more readily available for your body to absorb.

⭐️What’s in mine: organic produce which includes 1 leaf of lacinato kale. 1 small raw beet, 1 small carrot, small handful of microgreens, about 1/2 cup frozen blueberries, 1 tablespoon h**p hearts, 1 tablespoon tahini, 1/2 cup macadamia milk, 1/2 cup coconut milk. This checks all of the boxes for a nutrient-dense breakfast with enough healthy Fat, Fiber, and Protein that we want in every meal or snack to keep our blood sugar stable and help us feel full - of good things!

Today’s easy lunch: Lentil pasta tossed with tahini, olive oil, h**p hearts, garlic powder and pink Himalayan salt.

How I made it: Prepare pasta according to package directions, drain, transfer to bowl or plate and drizzle with olive oil. Salt and garlic powder to taste, toss. Melt a small amount of ghee in same pan used for pasta, add 3 leaves washed and torn Lacinato kale, salt and garlic powder to taste, and sauté 1-2 minutes. Put on top of pasta, sprinkle with 1 tablespoon h**p hearts, toss together again and enjoy!

Eating well doesn’t have to be boring. We can modify recipes to suit our needs, and we can discover new, nutrient-dense favorites - even when managing or other conditions! ☀️

For those struggling with histamine intolerance - you may have heard of high histamine foods, but did you know that how you store and prepare your foods contributes to histamine formation as well?

Here are my 3 best friends in my low-histamine kitchen:

1. Freezer. Histamine builds quickly in leftovers. By freezing meals quickly after preparing, you can stop histamine from forming - and have a great ready-to-go lunch the next day! I also use my freezer to store cut-up veggies and fruit to add to smoothies and soups. ❄️No freezer? Only prepare enough to eat at one meal at a time. Use a cooler with lots of ice if you need to store something frozen on occasion and short-term.❄️

2. Instant Pot or other pressure cooker. The longer a food cooks, the more histamine is formed, so my slow cooker has been on hiatus. My Instant Pot is a lifesaver for me! Cooking food quickly reduces histamine formation and makes meats especially tender and tasty. 🥘Don’t have one? Cook foods as quickly or as lightly as you can. 🥘

3. A good blender. It doesn’t have to be a high-end brand, as long as it works. If you’re like me, you need the easiest methods available to be motivated for healthy eating! A blender is something I can’t be without. Toss in your frozen low-histamine veggies, fruits, non-dairy milk, and protein source and you have breakfast in minutes! 🫐Blenderless? You can make a great breakfast bowl with all the same goodies.🫐

🌱 Don’t give up! No matter what your situation. Plants don’t usually become fully grown in one day - it takes time. Same with us! Whatever you’re going through, whatever changes you’re trying to make, keep going and keep growing - a little bit every day. Soon, you’ll be able to look back and see how far you’ve come! 🌳

We all need a treat from time to time - let’s make them yummy, easy, and healthy! I came up with this recipe to satisfy my chocolate cravings since I have MCAS and can’t tolerate chocolate at the moment. They also have gut-healing, nutrient-dense ingredients:

🟤Tigernut flour - a prebiotic flour that feeds your good gut flora. It’s also not a nut at all, but a root vegetable! I love using it for baked items.

🟤Carob powder - a great sub for cacao, nutrient-dense, and has a natural sweetness. Caffeine-free and may help keep blood sugar stable.

🟤Ground flaxseed - has Omega 3s, protein, and helps digestion.

🟤Hemp hearts - protein and a good balance of Omega 3 and Omega 6 fatty acids.

🟤Coconut oil - another good fat with so many benefits!

🟤Maple syrup - minerals and antioxidants.

These are also wonderful rolled in crushed pistachios or other nuts/seeds of choice. And if you are OK with cocoa, you can certainly use it in place of carob. Of course, we are all different, so if you’d like to try these and you can’t tolerate an ingredient, feel free to substitute it with another similar product. These freeze well too! ❄️

How to make them:

1/2 c. organic carob powder
1/2 c. organic tigernut flour
1/4 c. organic ground flaxseed
1/3 c. organic coconut oil
1/4 c. organic maple syrup
1/8 t. pink Himalayan salt
1/4 c. organic h**p hearts

Combine dry ingredients (except h**p hearts) - carob, tigernut, flaxseed, and salt. Add room-temperature coconut oil and mix - the dough will be a bit dry and have pea-sized pieces at this point. Add maple syrup and mix very well. Scoop up heaping teaspoons of dough and roll into balls, then roll in h**p hearts. Makes 12 energy bites. Enjoy! 💕
