So with all that’s going on right now, it’s good to be prepared for what tomorrow may bring. With that being said, it’s PI day so we took some blueberries from the freezer to make this perfect pie. Truth- FROZEN produce is just as great as fresh, if not better. Often times, more economical. Fresh produce in grocery stores is often picked early so it’s ripe by the time you get it at the store which does not allow for full maturity nutritionally. Flash frozen produce is picked at peak ripeness. Frozen produce is quick, easy and convenient.

Side note, blueberries are one of my favorite fruits. I love them fresh and frozen, as a snack or as a dessert. They are delicious and full of nutrition. A half cup is considered a serving and other then rinsing them, there is no prep or waste involved. Blueberries are one of the richest sources of antioxidant phytonutrients. Excellent sources of Vitamins A and C, potassium, and folate- this berry contributes positive results in neurocognitive effects, heart health, and anticancer properties.

Quinoa is considered to be a “pseudograin.” What does that mean? Pseudograins are nongrass seeds that are used in the same way as cereal grains. Believe it or not, there are over 120 different varieties of quinoa. These tiny little pseuodograins are packed with a great deal of protein, vitamins, and minerals. Specifically rich in magnesium, folate, and iron but so much more! Studies have suggested consistent use of quinoa can help lower triglycerides along with many other health benefits. Also, it’s considered to be gluten free so it’s great for people with celiacs disease or someone with a gluten sensitivity. Enough from me, what’s your favorite way to use this ancient grain?
