Some nights I open my fridge and just hope that I can come up with something for dinner.

Leftover chicken, broccoli florets, radish micro greens from , roasted garlic leftover from making hummus, Parmesan and some random spaghetti turned into a fettuccine alfredo of sorts. It was also nice to run out to the garden and grab some fresh parsley too.

Is this the prettiest, most delicious dish I’ve ever made?! Nope, not even close. Did it get the job of dinner on the fly done?! Absolutely YES!

Chicken burrito bowls were a big hit the other night in our household — even the pickiest of us ate several portions of the chicken.😋

Marinated for 24 hours with a mix of soy and citrus, this grilled chicken came out so tender and juicy. I haven’t had very much success in the past with grilling chicken so I’m super happy this turned out so well! Here’s your reminder that if you’re not great at something, you can always work to improve your skills. While I’m no grill master, I have continued to get better so here’s to hoping my skills will keep getting better.🙏🏼
