This is one of the most important parts of what we do. Taste, compare, adjust, repeat. Making sure the coffees we release are showing up the way they should.

A couple on the table right now that we’re especially hyped on:
Juan Peña from Ecuador, which is wildly expressive and full of character, and Luis Miguel Hoyos from Colombia, a coffee that’s just plain fun to drink. Both are the kind of coffees that remind us why we care so much about sourcing and roasting the way we do.

Earlier today on our story, we showed the process of turning single origin Mexican corn into fresh masa using our molinito. This is one of the reasons why.

Our Breakfast Tacos start with a fresh masa tortilla made from corn we nixtamalize and grind ourselves. It creates a foundation that’s warm, fragrant, and deeply flavorful in a way that’s hard to explain until you taste it.

On top, crispy “carne asada” pork belly. Rich, tender, and honestly the star of the show. Soft scrambled eggs, regional Mexican cheese, and salsa macha bring everything into balance.

If you’ve never had salsa macha before, it’s unlike most salsas. It’s made with dried chiles, avocado oil, garlic, and peanuts. It’s not bright and acidic. It’s deep, savory, slightly smoky, and layered. We get asked about it all the time, and for good reason.

Everything comes together in a way that just makes sense.

Add avocado. Trust us.

Noe met Anthony in Jaén, Peru. In that brief interaction, Anthony spoke with a quiet confidence about his farm, Finca El Aliso, and the work he’s building there.

This is our second time carrying his Gesha, grown at 1920 meters above sea level in the Amazonas region. Coffees like this require patience. The variety is delicate, low yielding, and unforgiving. But when everything aligns, the result is unmistakable.

This lot is precise and vibrant. Citrus zest, florals, white tea, and a strawberry-kiwi sweetness that feels both vibrant and calm at the same time.

It’s one of the most expensive coffees on our menu. And one of the ones we’re most proud of.

We’re honored to share Anthony’s work again. This coffee is available on our online store, at our Gainesville cafes (Wyatt’s and Resident), and soon will be available as a filter and espresso at Resident too.

Today was Valentine’s Day at Resident. And it was the busiest day we’ve ever had.

From the moment we opened the doors, it never really slowed down! Just a steady stream of people choosing to be here. Choosing to spend their morning, their conversations, their time with us.

It’s something I don’t think I’ll ever get used to.

When we first imagined this place, it was built on a belief that hospitality could feel different. More human. More intentional. Less transactional. And the way you’ve embraced that has meant more than I could ever properly put into words.

Days like today are a reminder that this isn’t normal. What exists here is special. And it only exists because you continue to show up and make it so.

I’m incredibly grateful. Truly. Thank you for being part of this.

Valentine’s Day at Resident 💘

This Saturday, we’re turning brunch into something a little bit dreamy and a little bit ridiculous in the best way. We’ll have a small run of Valentine’s specials like Steak Frites, our maple chipotle Chicken & Waffles, plus Chocolate Tres Leches and Big Shot Tiramisu for dessert. And yes, our Strawberry Guava Matcha and Chocolate Strawberry Latte will be in full effect all morning. Everything runs until it sells out.

DJ Ayo Papo will be holding it down with that smooth Valentine’s energy… the kind that makes you forget what time it is and maybe text your crush “wyd.” We’ll also have limited fresh bouquets if you want to look extra thoughtful (or just treat yourself).

We’re keeping the space cozy, present, and full of good energy this weekend, so we won’t be running Wi-Fi. If you need a spot to work or study, our downtown shop has you covered.

Whether you’re coming with your person, your besties, or flying solo, we’d love to spend the morning with you. See you Saturday. 💐
