🍲 Who wants to make this Hearty Italian soup? 🙋🏻♀️ I made it last night, this time with gold potatoes, fresh green beans and kidney beans. This is so satisfying and so nutritious. My favorite part about this recipe is that it is very versatile and calls for a jar of marinara sauce. So easy and yummy. Try it! I think you’ll like it too. I used beef broth in this batch! 😉

HEARTY ITALIAN SOUP

1 lb Italian sausage #
3 Tbsp olive oil
1 large onion, diced
3-4 garlic cloves, minced
2 celery ribs, chopped
3 medium carrots, chopped
6 cups bone broth (or more)
1 jar (4-5 cups) clean marinara sauce
2 cups chopped gold potatoes
1 16 oz package GF elbow pasta (optional)
2 cans rinsed kidney beans
2 tsp dried basil
1 tsp dried oregano
1/2 tsp dried thyme
crushed red pepper, to taste
Salt & pepper, to taste

Brown sausage & onions, in olive oil in a large pot on medium/high heat. Add carrots and celery and garlic and sauté for a few minutes, then add all the rest of ingredients and simmer on low for about 20 min until veggies are soft. If adding pasta, boil separate and add at the end. Add salt to taste. And the crushed red pepper enhances the flavor, add just a pinch! Top with Parmesan cheese, if that’s your thing. Enjoy!
