I was surprised when I did a poll to see if you sprinkle salt on your grapefruit and so many don’t! What?? It sounds weird but you gotta try it!!! Just a little sprinkle of real salt and it just enhances the yummy grapefruit flavor! For reals. It’s so good, trust me. Just a little sprinkle. And it has to be pink grapefruit. 💕💛

Because I’m nice and like to share, here is “Egg Roll in a Bowl”😁 It’s simple and healthy and took only 20 min to make! Tag a friend who you think would love this too! 👇🏼

Egg Roll in a Bowl! 🍲

1 lb ground beef
1/2 c chopped green onion
1 Small head of cabbage, chopped
1 cup chopped carrots
4 garlic cloves, minced
1 Tbsp zested ginger
1/4 c coconut aminos (or soy sauce)
1 Tbsp sesame oil
1/2 tsp sea salt (or more to taste)
crushed red pepper &
sesame seeds to top it

Start by browning the ground beef with a little salt. While that is cooking, take a small mixing bowl, mix together the garlic, ginger, coconut aminos and sesame oil. Set the sauce aside. Add all the veggies to the meat and cook together and toss for 3-4 min. Pour in the sauce and cook until the cabbage and carrots are tender-crisp. Add more salt to taste. Sprinkle with crushed red pepper and sesame seeds! This serves about 4-5 people.

I pan-fried the shrimp in garlic, lime juice and taco seasoning. I filled the bowl with romaine lettuce, black beans, cilantro lime rice, fajita peppers & onions, fresh guacamole, salsa, and of course, the pan-fried shrimp. So yummm!!!!!

One my most favorite meals to make! So yumm and so satisfying. 🍳 This is a spiralized white sweet potato with spinach and 2 eggs cooked to perfection. The yolk isn’t runny, but soft and gooey. Mmmmm. 🤤 And the ketchup is sugar-free spicy ketchup. 🔥

Isn’t this color amazing? 💕 This tropical, rare Pinkglow™ is 16 years in the making and is delivered right to your door in a beautiful package. It tastes super similar to a regular pineapple. 🍍So sweet and juicy, and maybe not quite as acidic. Delicious and beautiful!

This beautiful color is created when the enzyme that naturally metabolizes lycopene to beta carotene is no longer present. The lycopene accumulates and creates the pink color. Cool huh?

Are you off or on with eggs? 🍳 Depends on the day for me. Today it was on!! And they are always better with hash browns. Am I right? I ate mine with a spicy ketchup, and also a side of fresh cantaloupe and caramel to sip on. ☕️ Mmmmmm.

🍲 Who wants to make this Hearty Italian soup? 🙋🏻‍♀️ I made it last night, this time with gold potatoes, fresh green beans and kidney beans. This is so satisfying and so nutritious. My favorite part about this recipe is that it is very versatile and calls for a jar of marinara sauce. So easy and yummy. Try it! I think you’ll like it too. I used beef broth in this batch! 😉

HEARTY ITALIAN SOUP
-
1 lb Italian sausage #
3 Tbsp olive oil
1 large onion, diced
3-4 garlic cloves, minced
2 celery ribs, chopped
3 medium carrots, chopped
6 cups bone broth (or more)
1 jar (4-5 cups) clean marinara sauce
2 cups chopped gold potatoes
1 16 oz package GF elbow pasta (optional)
2 cans rinsed kidney beans
2 tsp dried basil
1 tsp dried oregano
1/2 tsp dried thyme
crushed red pepper, to taste
Salt & pepper, to taste

Brown sausage & onions, in olive oil in a large pot on medium/high heat. Add carrots and celery and garlic and sauté for a few minutes, then add all the rest of ingredients and simmer on low for about 20 min until veggies are soft. If adding pasta, boil separate and add at the end. Add salt to taste. And the crushed red pepper enhances the flavor, add just a pinch! Top with Parmesan cheese, if that’s your thing. Enjoy!
