Jack-O’-Lantern Stuffed Peppers (Turkey + Quinoa)

Ingredients (serves 6)
6 orange bell peppers (tops saved), carved like jack-o’-lanterns
1 lb lean ground turkey (or black beans for veg)
1 cup cooked quinoa (or brown rice/cauli rice)
1 small onion, diced
1 cup zucchini, finely diced
1 cup baby spinach, chopped
1 cup no-salt added tomato sauce
2 tsp chili powder
1 tsp garlic powder
½ tsp smoked paprika
½ tsp sea salt, pepper to taste
Optional: ½ cup shredded mozzarella or dairy-free cheese

Directions
Heat oven to 375°F. Slice lids from peppers; remove seeds. Use a paring knife to cut simple eyes & a smile.
Sauté onion in a little olive oil, 3–4 min. Add turkey; cook through. Stir in zucchini, spinach, spices, tomato sauce, quinoa; simmer 2–3 min.
Pack filling into peppers; top with a little cheese if using. Place lids back on.
Bake 15–20 min until peppers are just tender and faces look “glowy.”
Serve warm with a green salad or roasted broccoli.
