Collard Greens are a wonderful winter garden plant. I started these from seed last fall. As the weather warms up, they start to flower (or bolt) and then they die. In the kitchen, I love to sauté them in a little olive oil, garlic, lemon zest, salt and pepper. How do you like to eat them?

🐓🥦 Chicken Purses
with sautéed Broccolini.

This quick and easy dish looks like you spent hours in the kitchen but you didn’t!

Serves 4

1 - 12.5 oz can cooked chicken or rotisserie chicken
1/2 wheel Boursin cheese
2 T melted butter
1 t chopped garlic
1 t smoked paprika
2 T milk
Salt and Pepper
1 8 oz can refrigerated crescent rolls
1/2 cup seasoned bread crumbs

Mix the chicken, Boursin, butter, garlic, milk, and smoked paprika in a medium bowl. Mix well! Roll out the crescent rolls and form into four squares. Scoop the chicken mixture onto to each square. Pull up corners and loose ends of the dough to form a purse. Place on a greased baking sheet. Dust with bread crumbs. Bake in a 325 degree F oven for 30 minutes or until the purses are light brown. Serve with sautéed greens or a green salad!

Thai Peanut Tofu Sandwich! This one’s for Debbie at Trader Joe’s! I soaked a block of tofu in Trader Joe’s Thai peanut satay sauce and some sesame oil overnight. I toasted some Ezekiel bread, spread on some plant-based mayo and layered on sliced tofu, veggies (red cabbage, onions, red, sorrel, cilantro, sliced cucumbers, carrot ribbons, sliced avocado, sliced kumquats as well as chopped peanuts). This is one of those eat the rainbow kind of sandwiches and it was so delicious.

These were the first seeds that made me fall in love with gardening and growing my own food. These can be started (planted) right now in your garden in Zone 9b. 💗🌼🫜🥬

Beets make the base of this tasty pink pasta sauce. Perfect for Valentine’s Day! 💗

Serves 4
Combine two large roasted and peeled beets
1/2 C Greek yogurt
1/4 C ricotta cheese
1/4 C Parmesan cheese
1/4 C olive oil
1/4 C of water
salt and pepper
to a blender or nutribullet and blend until smooth.
Cook pasta of choice according to directions and drain. In a large bowl, add the beet sauce to the pasta and mix well. Serve the pasta over four beds of arugula. Sprinkle the pasta with chopped pistachio nuts and crumbled feta. I also made heart shaped beet pieces using a small heart shaped cookie cutter.

These prepared Indian meals are fantastic paired with homegrown vegetables like broccoli, broccolini, or cauliflower. I also like to add basil or cilantro! After a long day in the garden, I don’t like spending all evening in the kitchen so these prepared meals come in handy. I had a nice conversation with Ida up at Raley’s yesterday about Sukhi’s foods. Delicious!

A yummy and healthy plant-based sandwich for lunch using homegrown pickled peppers and greens (arugula, red sorrel, and lettuce), extra firm tofu, avocado, mayo, salt and pepper on Ezekiel bread. If you don’t grow Arugula or have any growing, I recommend Organic Girl. 🥬

It is so satisfying bringing the garden to our table! This lettuce was sown last fall inside and then transplanted outside. We will be harvesting lettuce from this crop for a few more months. Going to be making BLT’s for dinner! Yum!
