I work with people every day who are struggling with adrenal dysfunction, hormone imbalances, mitochondrial dysfunction and more that prevent them from living the life they deserve, showing up for the people they love, and being productive and functioning in their careers and business which also leads to financial freedom.

Who said salads need to be boring? Think outside of ranch dressing and romaine lettuce and turn your sights to the robust colors and flavors of this sweet and tangy Thai Chili Salad. I love adding rice noodles and mango to mine! Increase your protein by adding a filet of Sockeye Salmon or grilled chicken!

INGREDIENTS

๐ŸŒถSWEET CHILI DRESSING๐ŸŒถ:
1/3 cup Honey (regular honey or sugar-free honey)
1/2 tsp Crushed red pepper flakes
1 tbsp Rice vinegar
1 tbsp Water
1 clove Garlic (minced)

THAI SALAD:
3 cups Mixed greens
1/2 medium Pineapple (peeled and cut into strips, ~2 cups)
2 medium Carrots (peeled and julienned, ~1 cup)
2 small Cucumbers (quartered and sliced, ~1 cup)
1 large Red bell pepper (sliced into thin strips, ~1 cup)
1 cup Red cabbage (sliced into thin strips, optional)
1/4 cup Peanuts (crushed)

OPTIONAL (BUT PLEASE TRY) GARNISHES:
1 tbsp Sesame seeds
1/4 cup Green onions (chopped)
Fresh cilantro (chopped)
Fresh mint (chopped)
