Spicy Garlic Shrimp w/ Broccoli Mash

For the Broccoli Mash:

1 tbsp olive oil (3 healthy fats)
6 cups (18.6 oz) broccoli, cut into small florets (12 greens)
2 cloves garlic, minced (2 condiments)
2 cups vegetable or chicken broth (2 condiments)
3 tbsp half & half (1 healthy fat)
1 Laughing Cow Original Swiss Wedge (1 healthy fat)
3 tbsp parmesan cheese (3 condiments)
1/4 teaspoon salt (1 condiment)

For the Shrimp:

1 tbsp olive oil (3 healthy fats)
44.8 oz raw shrimp, peeled and deveined~Should yield 28 oz cooked (4 leanest)
1 tsp minced garlic (1 condiment)
1/2 teaspoon crushed chili pepper flakes (1 condiments)
2 tsp fresh ginger, grated (1 condiment)
1/8 tsp Salt (1/2 condiment)
1/4 tsp fresh cracked black pepper (1/2 condiment)
Lemon wedges, for garnish

Directions:
1. To make the shrimp and broccoli mash: Heat the olive oil in a large soup pot. Add the broccoli and garlic. Saute for a minute or two, until the garlic is really fragrant. Add 2 cups broth and simmer for 7 to 10 minutes, until soft.

2. Drain broccoli florets and garlic and transfer to a food processor. Add 3 tablespoons half & half and pulse until smooth. Adjust the consistency by adding few tablespoons of broth if needed. Stir in the salt and parmesan cheese, pulse once more and set aside.

3. For the shrimp: In a large skillet, add the olive oil over medium heat. Make sure to pat the shrimp dry. Add shrimp to the skillet and sprinkle with garlic, salt, pepper, ginger, chili pepper flakes, to taste. Cook for a few minutes on both sides, then add 2 tablespoons water or broth to the pan to deglaze the browned bits and spices to coat the shrimp.

4. Serve the spicy garlic shrimp with broccoli mash over a couple of spoonfuls of broccoli mash and garnish with lemon wedges. Enjoy!

Cecelia - I am holding 4️⃣0️⃣lbs of turkey! It’s hard to believe I was carrying this extra weight on my body before I began my journey! Thank God I trusted my coach who invited me to the most amazing community of support, shared learning tools to help change my mindset and how to still enjoy the holidays and focus on my goals and foods that would make me feel good about myself after the holidays! I love this program!

Chile Lime Shrimp 🦐 🔥

Ingredients:
33.6 oz shrimp, peeled and deveined~Yields 21 oz cooked (3 leanest)
7 tsp lime juice (3 1/2 condiments)
1.5 tsp lime zest (1/2 condiment)
2 cloves garlic, minced (2 condiments)
1/2 tsp. chili powder (1 condiments)
1/4 tsp. chili flakes (1/2 condiment)
1/2 tsp. ground cumin (1/2 condiment)
1/8 tsp kosher salt (1/2 condiment)
1/4 c. freshly chopped cilantro (1/4 condiment)
2 tbsp extra-virgin olive oil (6 healthy fats)

Directions:
* In a large bowl, whisk together lime juice, 1/4 cup olive oil, garlic, chili powder, chili flakes, cumin, and salt. Add shrimp to marinade, cover with plastic wrap, and refrigerate 30 minutes.
* Heat remaining oil in a large skillet over medium-high heat. Add shrimp and cook until pink and opaque. Remove from heat and stir in cilantro. Season to taste with salt and serve immediately with lime wedges.
* Serve with your choice of veggies, Cauliflower Rice is a great option!

Thai Coconut Curry Chicken🍗 🔥

Ingredients:
1/4 cup scallions, whites and greens separated chopped (1/2 Green)
1 tbsp Thai Kitchen Red Curry Paste (3 carbs for 1 tbsp) - (3 Condiments)
1 garlic clove, minced (1 Condiment)
1/2 cup Thai Kitchen lite coconut milk (2 Healthy Fats)
2 tsp fish sauce ( .66 Condiments)
2 tbsp fresh cilantro, chopped ( .12 Condiments)
1/4 tsp salt (1 Condiment)
16 oz boneless, skinless, chicken breasts (2 Lean)
2 3/4 cup Cooked cauliflower, grated (5 1/2 Greens)

Directions:
Spray a large nonstick skillet with cooking spray. Over medium high heat. Add scallion whites, garlic, and red curry paste and saute one minute. Add cubed chicken and salt cooking until almost done. Add coconut milk and fish sauce; mix well. Simmer about 2-3 minutes. Remove from heat, mix in scallion greens and cilantro. Serve over cauliflower rice.

2 Servings with 1 Leaner Lean, 3 Greens, 3 Condiments, and 1 Healthy Fat per serving
