Not only is it time for Easter and Passover within the next week but it's also the time of year where we'll see more asparagus on our tables!

So many great uses for it too! From using it in eggs or frittata to a side dish on your holiday table either with a hollandaise sauce or olive oil and garlic!

Tip: Add a different vegetable to your garden salad that you're already having at your next meal. It can be red onion, bell pepper (yellow for a different color) or even some grape tomatoes.

March has arrived and Spring is almost upon us! Finally!!!

I'm starting to see some Spring vegetables in the markets. A great transition vegetable is fennel. Have you tried fennel?

A quick way to enjoy it with your dinner is roasting it with carrots and onions with olive oil, salt and pepper. Fennel takes on a sweeter flavor when it's made this way.

Warm up with Winter Squash during these cold days of Winter with this Butternut Squash Saute!

Spiral butternut squash or use a peeler to create some ribbons. Cook it up in a saute pan with some avocado or olive oil and red onion or shallots, dried sage or thyme, sea salt and pepper. For the last few minutes add baby spinach or arugula to get a little green in there until it wilts. Serve with crumbled goat cheese and dried cranberries.
