Cajun Surf & Turf Loaded Stuffed Peppers
🛒 Ingredients :
4 large green bell peppers, tops cut and seeds removed
1/2 pound shrimp, peeled and deveined
1 pound ground beef
1/2 cup cooked rice (optional for extra bulk)
1/2 cup diced smoked turkey sausage or andouille
1/2 cup diced onion
1/2 cup diced green bell pepper, from the tops
2 cloves garlic, minced
1 cup shredded mozzarella or pepper jack cheese
1 tablespoon Cajun seasoning, plus more for shrimp
1/2 teaspoon smoked paprika
Salt and black pepper to taste
2 tablespoons olive oil
2 sliced green onions, for garnish
1/2 cup tomato sauce or fire roasted diced tomatoes
👩🍳 How to Make It :
1. Prep the Peppers:
Preheat the oven to 375 F. Arrange the hollowed bell peppers upright in a baking dish so they are ready to be filled.
2. Cook the Savory Filling:
Heat olive oil in a large skillet over medium heat. Add the ground beef, smoked sausage, diced onion, garlic, and diced pepper tops. Sprinkle in Cajun seasoning and smoked paprika. Cook until the meat is browned and the vegetables are soft and fragrant.
3. Build the Flavor:
Pour in the tomato sauce and stir in the cooked rice if using. Let the mixture simmer for a few minutes so the flavors mingle. Remove from heat and stir in half of the shredded cheese.
4. Stuff and Bake:
Spoon the hearty filling into each bell pepper and sprinkle the remaining cheese over the top. Bake uncovered for about 25 minutes until the peppers are tender and the cheese is melted and bubbly.
5. Cook the Shrimp and Finish:
Heat a little olive oil in a skillet and season the shrimp with Cajun seasoning. Cook until pink and juicy. Place several shrimp on top of each stuffed pepper and finish with a sprinkle of sliced green onions.
