Today is my 3-year A-Knee-versary. Three years ago, I was 50 lbs heavier, and hobbling into a surgery to put back my ACL with borrowed tissue and clean out the parts of my meniscus that prevented me from walking without a limp and straightening my leg all the way. After a few months of PT, I was back to playing softball and wearing a brace or a compression sleeve for extra support until my knee was healed. I was always nervous to play without it, or even go on bike rides, or long days of field trips with the kids.


This season, without the added weight and stress on my knees, I played with no extra support. (Well, it didn’t fit anymore) I was still nervous to be active without it. But I quickly learned my new limits - there were NONE! I didn’t have to rest after my games with my leg elevated and icing it, like I have in the past. I even played double and triple headers and up to three times a week at times. I totally credit this to the weight loss. And because my energy levels are so high, I’m still moving daily to hopefully combat the inevitable arthritis pain I’m bound to get one day.

Skillet Chicken Cordon Bleu
• 4 thin boneless, skinless cutlets, 6.4 oz each (raw)~should yield 3.3 oz each cooked~ (2.2 leaner)
• 1/2 teaspoon kosher salt (2 condiment)
• 3 Tbsp almond flour (4.5 condiments)
• 1 tbsp butter (2 healthy fat)
• 2 teaspoons olive oil (2 healthy fats)
• 2/3 cup reduced sodium chicken broth (1 condiment)
• 1 tbsp fresh lemon juice (1.5 condiment)
• 2 tsp Dijon mustard (2 condiment)
• 4 thin slices low sodium deli ham (4 oz total) (.8 lean)
• 4 slices light Swiss Cheese such as Alpine Lace (4 oz total) (1 lean)
• 1/4 cup chopped fresh parsley (1 condiment)

Directions:
Place the flour in a shallow dish. Lightly dredge the chicken with flour on both sides, shaking off the excess reserving the flour.

In a small bowl combine the chicken broth, lemon juice, Dijon mustard and 1 teaspoon of the reserved flour, whisk until smooth.

Heat a large nonstick skillet over medium-high heat. Melt the butter and add 1 teaspoon of the olive oil and half of the chicken. Cook 2 minutes on each side, until slightly golden, then transfer to a dish. Add remaining 1/2 teaspoon olive oil and remaining chicken and cook 2 minutes on each side. Set aside on a dish with the other pieces of chicken.

Reduce the heat to medium-low, add the chicken broth mixture. Whisk scraping up any bits stuck to the pan then simmer 2 minutes to reduce slightly. Return the chicken to the skillet, top each piece with a slice of ham and a slice of swiss, cover the skillet and simmer medium-low for 3 to 4 minutes until the cheese melts.

To serve use a spatula and transfer the chicken to each dish, spoon the remaining sauce over each piece.

Makes 4 servings

1 healthy fat

👍🏻 Good news…I get to start a new collection starting with Grand Haven this weekend.

We went to the gift shop and all they had was Small in this style. I kept walking by it thinking it’s not gonna happen. End of season, it was slim pickings here. Just for the heck of it, I tried it on before I walked out empty handed. THE SMALL FIT!!!!

Mexican Zucchini Boats
Makes 1 lean, 3 green

Ingredients
180 grams Zucchini (2 green)
1/2 cup Rotel (1 green)
4 oz shredded chicken breast (2/3 leaner)
1 1/3 oz low fat shredded cheese (1/3 lean)

Directions:
Preheat oven to 400 degrees. Cut zucchini in half lengthwise. With a spoon, scoop on the inside seeds to create the Zucchini Boat. I cut my zucchini into 3 boats to fit my pan. Fill each boat with shredded chicken, evenly distributing the chicken among the boats. Top the chicken with 1/2 cup of Rotel. Bake for 30 minutes. Add shredded cheese and bake for another 10 minutes.

I am never going back to the way I was! Before, I never even thought about how much better I could feel because feeling like crap was normal. Feeling exhausted and fighting migraines was normal. Aches and pains blamed on me getting old was normal.

You guys!! IT’S NOT NORMAL! Now, I can’t imagine going back to feeling like that all the time. Please, if you’re struggling too, don’t settle for that. Let me coach you to a better you!

I tell everyone how this program is the easiest thing I've ever done! It is perfect for the busy lifestyle! Julia is a busy realtor always on the go and still shed 70 lbs!

Stuffed Pepper Casserole

Makes 4 servings
Per serving: 1 Lean protein, 3 Greens and 2.5 Condiments

Ingredients:
•15 oz cooked lean ground beef ~ about 21 oz raw (3 Leans)
•1/4 cup onion, diced (4 Condiments)
•2 tsp garlic, minced (2 Condiments)
•1 1/2 cups green peppers, chopped (3 Greens)
•1 (14.5oz) can Great Value Italian diced tomatoes, drained (3 1/2 Greens)
•1 cup no sugar added marinara sauce (>5g carb/serving) (4 Greens)
•3/4 cup cauliflower rice (1 1/2 Greens)
•1 tbsp soy sauce (1 Condiment)
•1/2 teaspoon salt (2 Condiments)
•1/4 teaspoon pepper (1/2 Condiment)
•1 cup shredded part-skim mozzarella cheese (1 Lean)

Directions:
In a large skillet over medium high heat, add ground beef, onion, and garlic. Cook until browned.

Add the rest of the ingredients except the mozzarella cheese. Stir to combine. Transfer mixture into a casserole baking dish.

Cover with aluminum foil and bake at 350 degrees for 35 to 40 minutes.

Take out of the oven, sprinkle mozzarella cheese on top and bake an additional 5 to 10 minutes or until cheese melts. Divide into 4 equal servings.

If freezing for later, do not add the mozzarella cheese until you are about to bake it. Thaw overnight in the refrigerator and then bake at 350 degrees for about 35 to 40 minutes covered. Add cheese and bake an additional 5 to 10 minutes or until cheese melts

I had another NSV from yesterday! I had a softball game yesterday afternoon. When that game was over, my other team from Tuesday nights played right after us and needed another girl so, they asked me to play. I said yes without hesitation. It was HOT and my only concern was I just needed to get another water for a second game. Before losing 50 lbs, I dreaded double headers in the heat and I would have found any excuse I could to get my sweaty butt back home in the A/C.

Then…I came home to play on the 4 wheeler for a while and then hit all my goals for the day on FitBit.

I will be making these soon.....we are going to have so much Zucchini coming from our garden!

ZUCCHINI SLIDERS
(1 Complete Lean & Green w/3 condiments)
Ingredients:
12oz zucchini sliced into 1/2 inch rounds
6.5oz 90% lean ground beef divided into 3 portions
Reduced fat cheddar cheese

Preheat oven to 425
Season zucchini with salt/pepper and spray with cooking oil spray
Bake for 5 mins
Turn oven to broil, place pan near the top and broil 3-5 minutes or until zucchini is tender crisp.
For each slider take portion of beef and divide - add cheese to middle and seal beef around. Do this for remaining 2 burgers.
Cook in skillet for 6 minutes over medium high heat and flipping after 3 minutes.

To plate: Zucchini slice on bottom, burger, dollop of mustard, and top with zucchini. Any remaining zucchini plate as a side dish.

“Hey girl, it’s ok. It happens to the best of us and life in this crazy world is not set up for optimal health. However, your body is and that includes your mind. If you can give me a couple of months, we can develop some really simple habits to replace your current ones that will leave you at a healthy weight with all the calm, focused energy you need for life. You will probably hang on to that dress for far longer than you need it because she is old and faithful and did you a solid on many days when nothing else was going to fit. That’s ok too. Let’s get going. There’s no need for this picture on the left to be a thing ever again.”
