Soup szn 🥣

tastes WAY better than canned soup. Good way to use up any leftover veggies you have on hand!

Directions:
Preheat oven to 400

Combine tomatoes, onions, red bell pepper and lots of garlic with olive oil on a baking sheet or in a baking dish.
Season veggies: sea salt, garlic powder, paprika, Italian seasoning or dried basil

Roast your veggies - Cook at about 375/400 degrees for 20-25 mins depending on your oven

Transfer to a soup pot add about 1/4 cup bone broth and about 1/4 cup of heavy cream or milk and fresh or dried basil.

Blend with an immersion blender or in a blender until smooth. Top with fresh basil

Prep your grilled cheese w/ sourdough bread, your fav organic cheese. Tastes best if you use butter in your pan 😋

Leftovers build the best bowls 🙌

Fiber & greens + protein + carbs

Ingredients:
Chopped iceberg lettuce, fermented pickled veggies, leftover orzo, leftover crispy chicken, juice of ½ lime, avocado oil buffalo sauce from Primal Kitchen.

I’ve been trying to perfect my homemade “breaded” crispy chicken bites! I used a little organic cornmeal, organic flour, paprika, salt and olive oil to crisp them up in the air fryer.

Mammoth got over 5 ft of snow ❄️ We had to help my mom dig out of deep powder on a mellow blue green run in fresh powder. I skied 12/24/25 and 12/25/25 and saw so many people head outside groomed runs into deep powder. I witnessed multiple people get stuck in tree wells and deep snow. We had walkie talkies (shoutout ), which allowed us to quickly communicate with others in our group and alert staff so ski patrol could respond fast.

The day after Christmas, there was an avalanche on Lincoln Mountain and the entire resort was closed down. Always remember to ride with a buddy, carry proper communication, and make smart decisions in deep powder conditions.

Thinking about the incredibly strong and brave Mammoth Ski Patrol team 🤍 RIP Cole Murphy

stop skipping breakfast! prep ahead

I never have enough time to cook a full breakfast or eggs in the morning so I love having soft boiled eggs on hand to eat with toast & fruit. They also make a perfect protein snack anytime of the day.

sunset run ☀️

ran 3.5 miles (1/2 race distance) a week before my race

Last long run will be 7 miles 7 days before my Olympic tri

Day before the tri, I’ll do a shake out brick: 1 -2 mile easy bike, and 1.2 mile run easy slow pace

the hardest part about open water swimming is getting in the water! Once you’re in, it’s easy.

ingredients:
(Use organic if you can)
3 tbsp coconut oil
2 tbsp castor oil
2 tbsp cold pressed sunflower oil
1 tbsp shea butter
2 tbsp beeswax

Double or triple this up depending on how many you want to make!

My dog Zorro loves this balm on any dry skin spots or irritations he gets during allergy season. It’s also really moisturizing and soothing for his paw pads year round.

homemade vanilla syrup

once you make this, you won’t be able to stop!

directions & ingredients:

2 organic vanilla beans
1 cup organic / unrefined coconut sugar
1 cup filtered water

Cut open the vanilla pod lengthwise on one side so you open it up and can take a butter knife or small spoon to scrape the vanilla seeds out into the pan along with the bean pod.

Next, add your filtered water and sugar to a pot and turn heat on medium / low. You don’t want to burn it, just simmer it to dissolve all the sugar!

Let cool & transfer to jar along with the vanilla pods.

This is also delicious if you add some pumpkin pie spice, cinnamon powder or cinnamon sticks for a fun fall flavor.

My morning coffee / iced lattes taste SO good with this syrup!

Salsa Verde 🌶️

Here’s what I used:

about 9 tomatillos, one onion, 2-3 Serrano pepper, 1 bunch of cilantro, juice of 2-3 limes, sea salt & some raw chopped onions to mix in.

It was my first time making it. Next time I think I need to get more of a char on the veggies & use my food processor vs a blender. But it still turned out really yummy!
