Debbie and I went our riding Monday, stopped at one of my bakeries listed on my website "Clayton Bakery", 8970 US-70 BUS #200, Clayton, NC 27520 This is one of my favorite bakeries to visit. great bakery products and outstanding panini sandwiches. I had a Cubano and Debbie had the chicken salad. Last trip we got their Apple gobbler panini and Italian panini. It is a must stop for you that live in Eastern NC. Rich and his wife do a great job! Sloppy Joe's
Nothing is as good as well made "Joe"
I
Ground beef 85/ 15 or better 1 lb
Ketchup 1/2 cup
Vinegar, apple cider 2 Tbsp.
Brown sugar 1/2 tsp
Mustard, yellow 2 Tbsp.
Salt 2 pinches
Onion, Fine diced 1 small
Water 2 Tbsp.

Instructions

Cook ground beef in its own fat until beef loses it’s pink color, stirring to break apart. Drain or skin off excess fat.
Combine onions, ketchup, mustard, salt, brown sugar, vinegar and water: add to beef; stir to mix well.
Cover; simmer 15 minutes; stir occasionally to prevent burning.

Notes

This recipe freezes well. Add cooked red or green peppers, bacon pieces, diced pepperoni.

Slow-cooker Beef Stroganoff
Great flavor, simply recipe, just add your favorite noodles or rice.


1 pound cubed beef stew meat
1 (10.75 ounce) can condensed golden mushroom soup
1/2 cup chopped onion
1 tablespoon Worcestershire sauce
1/4 cup water
4 ounces cream cheese

Instructions

In a slow cooker, combine the meat, soup, onion, Worcestershire sauce and water.
Cook on Low setting for 8 hours, or on High setting for about 5 hours. Stir in cream cheese just before serving.

New England Clam Chowder
Do you know: Several year ago in the Maine Senate, they presented a bill, that clam chowder made with tomato sauce not milk would not be able to be called clam chowder in the state of Maine, They love their white clam chowder.

Ingredients

Clams, diced canned, in juice 3 - 6 oz cans
Bacon, raw, diced 4 slices
Olive oil 3 Tbsp.
Scallions or Green onions, 1/4 inch diced 1/2 cup
Celery, small diced 2 stalks
Flour, A.P. 1/4 cup, 2 Tbsp.
Thyme, whole leaf, dry 1/4 tsp.
Potatoes, peeled, ½ inch diced 3 medium potatoes
Salt & pepper 1/2 tsp.
Milk 2 cup

Instructions

Brown bacon, remove bacon, add olive oil, saute onions and celery for about 4-5 minutes. Add potatoes, thyme, pepper and salt, saute 4-5 minutes. Add the flour, stir well. Add milk, bacon, and clam juice.
Simmer over medium heat , covered, Do not Boil cook for 25-30 minutes or until potatoes are soft.
Add clams, adjust seasoning with salt & pepper, simmer for 5-10 minutes.

Note: Common mistakes when preparing New England Clam Chowder.
1. Boiling the stock after the milk is added, the milk could break (separate)ruining the chowder.
2.Adding the clams to early, making them rubbery.

Ham & Potato Soup
Great soup for a cold day!!

3 cups Milk
3 cups Chicken broth
4 large potatoes, large, 1/2 inch cubes
4 tbsp Butter
1/4 cup Flour
1 lb smoked cured ham, 1/2 inch dice
1 small Onion, diced
dash Pepper

Instructions

In a 2 quart sauce pan; sweat onions in butter, for 2-3 minutes. Add ham and sweat for 2-3 minutes. Add potatoes and sweat for 4-5 minutes.
Sprinkle flour over potatoes, mix well. Add milk and chicken broth, stir well. Add a couple pinches of black pepper.
Bring the soup to just below a boil; stir well; cover, reduce heat to low and simmer for 1 hour.
After 1 hour check the potatoes for doneness, bring back to just below a boil. Remove from heat.

Pumpkin Black Bean Chipotle Soup

Ingredients

Black Beans, drained, rinsed 1-15 oz can
Chicken Broth 2-1/2 cups
Onion, fine diced 1 each
Celery, fine diced 1/2 cup
Pumpkin, canned, 100% pure 1-15 oz can
Chipotle, ground 1/2 tsp
Cumin, ground 1-1/2 tsp
Salt to taste
Garlic, granulated 1/2 tsp
Butter 3 Tbsp

Instructions

Saute onions and celery in butter until translucent. Add drained beans and spices, with well, cook 4-5 minutes.
Combine pumpkin with the chicken broth, mix well.
Add the pumpkin/broth mixture to the beans.
Bring to a boil, reduce to a simmer. Simmer for 30-45 minutes uncovered, stirring occasionally

Notes

Great with sour cream and cheese as garnish.

Savory Country Meatloaf


Ground beef 2 lbs
Bread, slices 4 slices
Milk 1/2 cup
Oatmeal 1/2 cup
Worcestershire sauce 1 Tbsp
Onions, fine diced,slightly sauteed 1 cup
Granulated garlic 1 tsp
Black pepper 1/4 tsp
Salt 1 tsp
Eggs 3 each

Instructions

Break the bread into small pieces; pour milk over bread and mash into a wet meal.
Add all ingredients in one bowl, mix until well incorporated.
Place on a sheet pan; form into a uniform loaf.
Bake at 350F for 40-45 minutes or until done. Let stand for 10 minutes. Slice and enjoy.

Note: You can place your favorite gravy over top. Such as

Brown gravy
Brown onion gravy
County milk gravy
Also many of my customers like a sweet topping of brown sugar and ketchup. Just combine 1/2 cup ketchup with 1/2 cup of brown sugar and 2 Tbsp of water. Cook for 2-3 minutes or microwave. Rub on top of cooked meatloaf, return to oven for 3-4 minutes.
