My taste buds are screaming for more but my stomach is full!! What should I do??!!
Answer: Post this and reevaluate my hunger…

I used a seasoning packet for white chicken chili from the grocery store. I used all the seasoning packets to make it 🔥🔥🔥! Then I tasted and decided it was too salty so I added 2 cups more of water. The 🔥stayed the same. No worries! I added more bell peppers and an extra can of Navy beans than recommended. I added more cumin and onion powder. I played with the flavor and just kept adding my own flare. So delicious by the end of it!!

I served myself and added some light sour cream (you can sub plain Greek yogurt or cottage cheese) and some mexican cheese (only cheese I had in the fridge, it calls for Monterey Jack) and some avocado. It took a little more than 30 min to cook for a quick meal after a late work day. I’ll enjoy the leftovers for sure!!

A little lunch inspiration for you…

Homemade soup made last night: Roasted in a 9 x 8.5 ceramic pan; one bell pepper, half head of broccoli, half head of cauliflower, one leek, one garlic bulb and a block of feta cheese for about 45 min at 400 degrees, then blended together with 32floz chicken broth. I then heated it back up and added seasonings. I didn’t follow a recipe and I forgot to snap pics. But once it was heated and served I added crushed red pepper and a dollop of cottage cheese.

Today’s leftover Feta and vegetable soup was served with Fresh and Crisp Farms green leaf lettuce, olive oil, lemon, salt and fresh cracked pepper, a side of unsweetened pink grapefruit and a sliced cocktail tomato.

This meal was light but filling and packed with tons of vitamins, minerals, fiber and protein.

I wanted to share my dinner with you tonight. I’m low on groceries. Low on time and desire to go shopping. I pulled a healthy dinner from my back up stash.

1 Bag of Gigli 3 color pasta from Aldi, a jar of Rao’s Arrabbiata sauce and 2 pounds of farm raised beef from Lost Creek Farm with a sprinkle of Parmesan cheese. I used a small plate to keep the carbs low but did not go hungry.

Consider keeping go to meal options, that don’t go bad, in your pantry and freezer for days like this. You can choose a high protein or low carb pasta if you prefer. I’ll have leftovers for later and that makes me happy!

Tips for non sticky pasta: rinse with cold water, add olive oil and give it a stir. You’ll get all the food groups with this one. I’m counting the tomatoes as a fruit and veggie 😆😉
