✨ Working with Lavender
Choosing Your Lavender:
- Use culinary lavender (Lavandula angustifolia) specifically, as it has the best flavor
- English lavender varieties are ideal for baking
- Ensure your lavender is food-grade and organic, not ornamental or treated with chemicals
Preparing the Flowers:
- If using fresh lavender, harvest in the morning when oils are strongest
- Remove any stems or green parts as they can be bitter
- Finely chop the flowers to distribute flavor evenly
- Don't use too much - lavender can quickly overwhelm and make food taste "soapy"
Storage Tips:
- Store dried lavender in an airtight container away from light
- Keep in a cool, dark place for up to one year
- Label with date of purchase or harvest
Magical Enhancement Tips:
- Harvest or work with lavender during a full moon to enhance its calming properties
- Stir the batter clockwise to invite positive energy
- Set intentions of peace and tranquility while baking
- Consider serving at afternoon tea rituals or spiritual gatherings
Flavor Balancing:
- The lemon in the glaze helps balance the floral notes
