Veggie ID Reveal!!!
If you got this one right you surely frequent latin supermarkets because that's the only place in Florida I've ever found it. 👍🏻

🧐What it is:
A gnarly-looking root veggie that tastes like a mix of celery and potato. Don’t be scared by the rough exterior. It’s a softie inside.

💪🏻Why it’s good for your body:
• Low carb and high fiber
• Great for gut health
• Rich in antioxidants

🗡️How to prep:
Use a sharp knife instead of a peeler. Cut the ends off, stand it upright, and slice the skin away.

🥣How to use:
• Mash it like mashed potatoes
• Slice thin and roast
• Add cubes to soups and stews

👉🏻Try this:
Celeriac purée: simmer cubes in broth until soft, then blend with a little butter, garlic, salt and a pinch of nutmeg. Creamy heaven.

💡Bonus:
Choose ones that feel heavy and firm.

🥬Veggie Reveal Day 3: Meet Chicory/Radicchio

🌿 What it is:

A leafy vegetable from the dandelion family.

Comes in several varieties — curly endive, escarole, and the root (used as a coffee substitute).

Has a mild to strong bitter flavor that adds depth to dishes.

💚 Why it’s good for you:

Rich in antioxidants and vitamin K.

High in inulin, a prebiotic fiber that supports gut health and balanced blood sugar.

Bitterness stimulates digestion and supports liver health.

🍽️ How to use it:

Raw: Adds a bold, zesty bite to salads — pairs beautifully with citrus or apples.

Cooked: Sauté or grill to mellow the bitterness and bring out nutty notes.

Root: Roast, dry, and grind for a caffeine-free coffee alternative.

✨ Try this:
Toss chopped chicory with orange slices, walnuts, and a drizzle of olive oil and vinegar for a refreshing, balanced salad.

🥳🥳Veggie ID Challenge Reveals 🥳🥳🥳

🧐What it is:
A starchy root vegetable common in Latin, Caribbean, and Asian cooking. Kind of like a potato’s cool cousin.

💪🏻Why it’s good for your body:
• High-energy complex carbs
• Naturally gluten-free
• Supports gut health

👐🏻Important note:
Yucca must be cooked properly. Never eat it raw.

🗡️How to prep:
Cut off the ends, slice lengthwise, and peel off the thick brown rind. Boil until fork-tender.

🥣How to use:
• Mash it
• Make yucca fries
• Add to soups or stews

👉🏻Try this:
Yucca fries: boil until soft, cut into sticks, then pan-fry until golden and sprinkle with salt. So good.

💡Bonus:
Look for pieces that aren’t cracked or moldy.

🥳🥳🥳 Veggie Challenge Reveals 🥳🥳🥳

Day 1: Leeks

🧐What it is:
Leeks are in the onion family but much milder, sweeter, and way more elegant than their loudmouthed cousins.

💪🏻Why it’s good for your body:
• Supports digestion
• High in vitamin K and folate
• Awesome for heart health

👐🏻How to prep:
Slice off the dark green tops, cut lengthwise, and rinse between the layers. Dirt loves to hide in there like it’s on vacation.

🥣How to use:
• Add to soups for a gentle, sweet onion flavor
• Sauté with butter or olive oil as a base for any dish
• Mix into omelets, quiches, or stir-fries

👉🏻Try this:
Sauté thin slices in a little butter until soft. Add eggs and cheese. You’ve got the easiest “fancy breakfast” ever.

💚Bonus:
Leeks last longer than you think. Wrap loosely in a bag and keep in the fridge for up to a week.

🌿 Leek Quiche; Simple, Nourishing, and So Underrated! 🌿

Tonight I prepared a leek quiche for tomorrow, and it reminded me how wonderfully simple balanced eating can be. This dish feels like something fancy you’d enjoy at a weekend brunch, yet it’s one of the easiest, most versatile meals to make! Perfect for busy moms who want a nourishing option that fits into real life. 💛

Leeks are such a gentle superfood, part of the onion family but milder and easier on digestion. They’re rich in antioxidants, vitamin K, and folate, all supporting heart health and immune balance. Add them into a quiche, and you’ve got a meal that’s both comforting and nutrient-packed.

This is one of those recipes every momma should have in her collection. A little bit of ease, a little bit of nourishment, and a whole lot of love. 💫

Want the recipe? Comment 💚 or “quiche me!” below and I’ll send it your way!

Lately, I’ve been using ChatGPT to inspire my lunches — and honestly, it’s been such a game changer! Since it already knows my usual preferences, the suggestions are almost always spot on with what I have in my fridge or pantry.

Today’s creation came from my usual prompt: “Give me an idea for lunch.”
The result? Asian chicken with ginger and carrots, wrapped in homemade tortillas. 🌯✨ If I’d had avocados, they would’ve been the perfect finishing touch!

It’s a reminder that technology can actually help us — not just distract us. I would’ve never come up with this combo on my own, but it turned out delicious and saved me from the dreaded “What should I make?” spiral.

Don’t be afraid to use tech to make life a little easier — sometimes it’s the small things, like freeing up a bit of mental space at lunchtime. 💡

💜 Lighten Up on Yourself 💜

I often see clients self-sabotage before they even start. They feel like they should be doing so much better — eating cleaner, working out more, being more disciplined. But that “should” talk? It’s what kills motivation before real progress can even begin. 👎🏼

Here’s the thing: you don’t have to do it all perfectly. You just have to start. 👏🏼

Maybe you planned to work out three times this week, but today you only have energy for a short walk — go for it.👍🏼
You wanted to hit the gym, but life’s too busy right now — move in your living room or garage.🤸🏼‍♀️
You’re exhausted from caring for your family — take a deep breath, reach for your toes, and stretch out those kinks.🌬️

Every small step forward is a victory. Celebrate those moments instead of criticizing yourself for not doing more.

Because real balance isn’t about perfection... It’s about kindness toward yourself and consistency in the little things. 💜

🌸 A Gentle Reminder for All the Moms 🌸

I haven’t been feeling 100% the last couple of days, so I’ve been leaning into rest — slowing down, nourishing with warm soups, and sipping tea with honey.

Sometimes our bodies whisper before they shout, reminding us that rest isn’t a luxury — it’s a necessity. When we pause to restore, we allow our energy, patience, and creativity to refill.

So if you’ve been pushing through, consider this your permission to rest. 💛
Because caring for yourself is caring for your family — and your body will thank you for listening.

✨ Lighten up, live balanced ✨

If you look hard enough, there’s always a pocket of peace waiting for you—even in the busiest day. 🌿 Sometimes all it takes is a deep breath, a quiet moment, and a reminder that your body and mind deserve this pause. ✨

Take a seat, inhale calm, exhale stress. You’ll be amazed how much good even a few minutes can do. 💆‍♀️

Life is meant to be Activated!!!!

Sometimes we can get pulled down by the pressure of life, especially if you are in a difficult situation like I found myself in for a while. Being the step mom of 2 kids, one with special needs, working way too many hours and forgetting about my health and happiness led me to make some drastic changes and literally Activate myself from the inside out.

Its not an easy journey alone which is why I want to share what I have learned along the way and help you activate your life, body, mind, and spirit. Hopefully helping you find that smile that makes your face glow bright and your loved ones shine with you; because when Momma is happy - everything just flows a little better.

With love, Daisy V.
