Six in ten adults are living with at least one chronic disease. ⚠️

And much of it is lifestyle-related — especially diet. 🍔➡️🥦

What we eat every day either fuels the problem… or helps fix it. 🌱✨

Research shows whole-food plant-based dietary patterns are strongly associated with lower risks of cardiovascular disease, hypertension, type 2 diabetes, obesity, and even premature mortality.

Why?

Because replacing highly processed and animal-heavy meals with whole grains, legumes, fruits, and vegetables increases fiber and protective phytonutrients while lowering saturated fat and excess calories.

That combination helps improve cholesterol levels, blood pressure, insulin sensitivity, and overall metabolic health.

This isn’t about a short-term diet.

It’s about addressing root causes, not just managing symptoms.

The kitchen was buzzing with festive energy as everyone chopped, stirred, and rolled their way through delicious plant-based recipes.

Beyond the cooking, the day was also about connection and mental wellness. Conversations, shared laughter, and teamwork created a supportive space where participants could learn, experiment, and nourish both body and mind.

Watching everyone taste, create, and connect reminded me why I love what I do: blending culture, wellness, and culinary skills into moments that inspire joy and growth.

Wow! What an incredible day at our CNY Cooking Class 2026! 🥢🍜

Loved seeing everyone chopping, mixing, tasting, and just having a blast in the kitchen. 💛 The energy was unreal, laughter, curiosity, and so much joy everywhere!

A huge thank you to the for supporting this event 🙌. Starting the day with conversations about mental health, self-care, and wellbeing, and then moving into cooking together, made the experience so meaningful.

It reminded us all how food, culture, and connection can nurture both our hearts and minds. 🥬🍲

Watching everyone learn new plant-based recipes, practice culinary skills, and connect with one another over food was truly special. These moments of culturally-aligned joy, learning, and community are exactly why I love what I do.

You might know that eating certain foods can raise your heart disease risk.

Even though changing your eating habits can feel challenging, you can take simple steps today.

Whether you’ve been eating less-than-ideal foods for years, or you just want to fine-tune your diet, these heart-healthy tips are a great place to start.

Focus on foods that support your heart and limit the ones that can silently raise your risk.

Foods to Eat:
🥬 Leafy greens – spinach, kale, swiss chard
🍓 Berries – blueberries, strawberries, raspberries
🫘 Legumes – beans, lentils, chickpeas
🌰 Walnuts – healthy fats that improve cholesterol
🥑 Avocado – monounsaturated fats for heart protection
🍊 Oranges – vitamin C and antioxidants for healthy arteries

Foods to Avoid:
🧈 Butter – high in saturated fat
🥩 Red meat – linked to inflammation and higher cholesterol
🥓 Processed meats – bacon, sausages, deli meats

Small, consistent changes in what you eat can have a big impact over time.

Start by adding more plant-based, whole foods and gradually reducing the ones that stress your heart.

We’ve been taught that chronic disease is a personal failure.

But the facts say otherwise. 🛑

Public research shows it’s a system problem, not just about choices, but about a broken food and health system.

🍟 Highly processed foods dominate our diets.
🥦 Fiber is missing from most plates.
🔥 Inflammation becomes the norm instead of the exception.

That’s why heart disease, diabetes, and metabolic dysfunction are now so common.

It’s not just you, it’s everywhere.

🔬 Unhealthy diets contribute to nearly 11 million premature deaths every year (Global Burden of Disease Study, 2017).
💸 90% of U.S. healthcare spending is tied to chronic disease and mental health (CDC).
📈 Obesity rates are projected to keep rising through 2035 (JAMA, 2025).

The solution?

More plants. More fiber. More awareness.

Plant-based eating isn’t about restriction, it’s about choosing quality foods that nourish your body and mind.

When you build your plate around whole, plant-based foods, you naturally boost your overall diet quality.

Research consistently shows that people following well-planned plant-based diets score higher on measures like the Healthy Eating Index, which means they’re getting more of the good stuff and less of what can harm long-term health.

What does that really mean for you?
🌱 More fiber to support gut health and keep you feeling full
🌱 Higher intakes of magnesium and potassium for heart and muscle function
🌱 More vitamin C and protective plant compounds that help your body fight inflammation
🌱 Less saturated fat, which is linked to lower risk of chronic diseases

Data from the Adventist Health Studies also show that strict vegetarians consume about half the saturated fat and significantly more fiber compared to the average American diet.

Worried about protein? You don’t have to be!

With a balanced plant-based diet, it’s easy to meet your protein needs from a variety of sources like beans, lentils, tofu, whole grains, and nuts. The only nutrients to keep an eye on are vitamin B12 (and sometimes vitamin D), which can be supplemented if needed.

Remember, plant-based eating isn’t a fleeting trend, it’s a proven, evidence-based way to improve your nutrition and reduce your risk for long-term chronic diseases.

What they’re not telling you about the 2025–2030 Dietary Guidelines 👀

Let’s start with what’s solid. The guidelines encourage:
🌱 Whole fruits, vegetables & whole grains
❌ Limiting added sugars and ultra-processed foods
🧈 Saturated fat ≤10% of daily calories

That aligns with long-standing public health recommendations.

Research published in Diabetes Care (2023) shows plant-forward dietary patterns are associated with a 25–30% lower risk of heart disease. Other large cohort studies link these patterns to lower risk of type 2 diabetes and some cancers.

At the same time, ultra-processed and animal-heavy dietary patterns continue to be associated with higher chronic disease risk.

Where people feel confused is in the emphasis.
- Saturated fat is limited, yet red meat and full-fat dairy remain visible in recommended patterns.
- Plant proteins like beans, lentils, and nuts which are consistently associated with better long-term outcomes, receive less attention in comparison.

There are also broader concerns raised by experts about:
• Protein targets without context, which may lead to excess calorie intake
• Industry ties that could influence recommendations
• Limited transparency in the review process

Ultra-processed and animal-heavy dietary patterns continue to be associated with higher chronic disease risk.

Nutrition guidance should be clear, consistent, and rooted in strong independent science.
