whipped up chicken fajita tacos using cauliflower rice for a healthier alternative & they turned out sooo BOMB + these healthy tacos are GF, dairy-free, & grain-free. You have to try too!!

All surf today. Who else likes big bowls of shrimp??

For the base: jicama, red bell peppers, Persian cucumbers, fresh herbs (Josie’s organic parsley, mint, cilantro), red onion, roasted artichoke.

Dressing: high-quality olive oil, juiced half a lime, and added sea salt + pepper to taste.

Shrimp: Peeled + deveined about a pound of shrimp. Pat dry with a paper towel. Added olive oil, sea salt, pepper, some paleo powder seasoning, and some Sadaf fish seasoning. Put some olive oil in a pan and cooked these on medium high for about a minute on each side.

Seared salmon with grilled asparagus and cheesy baked cauliflower gratin for lunch! 🤤🤤🤤

CHEESY BAKED CAULIFLOWER GRATIN 🍚
1 lb cauliflower (about 4 cups)• 3 T ghee (or butter)•1 T almond flour •1 T coconut flour•1 1/4 cup milk(dairy or dairy free)•1/2 tsp salt•1/4 tsp garlic powder•1/4 cup parmesan•black pepper to taste•1 cup white cheddar cheese (any sharp cheese will work) 1) Preheat oven to 350 F. 2) In a large pot with a steamer inserted, steam cauliflower, until tender (about 5-7 min). While the cauliflower is steaming, melt the ghee (or butter) in a medium pan over medium high heat. Once melted, add the almond flour and coconut flour, and whisk until it begins to brown (about 1 minute). 3) Add the milk, salt, garlic powder, onion powder, and pepper; whisk until smooth and then bring to a boil. Once boiling, reduce heat and simmer until very thick (about 6-8 min). 4) Remove the milk mixture from heat and whisk in parmesan and 1/2 cup of the cheddar cheese. 5) Spread half the cheese sauce in the bottom of an 8x8 inch pan. Add the cauliflower and pour the rest of the sauce on top. Sprinkle with remaining cheese. Bake 25-30 minutes, until golden and bubbly.
