Healthy Taco Soup (Crockpot)
Ingredients
• 1 lb ground beef
• 18 oz reduced-fat cream cheese
• 1 can Rotel (diced tomatoes with green chilies)
• ½ cup low-sodium chicken broth
• 1 can corn, drained
• 1 packet taco seasoning
Optional Toppings
• Shredded cheese
• Greek yogurt (as a sour cream substitute) or sour cream
Instructions
1. Add the ground beef to a crockpot (you can brown it first if you prefer, but it’s optional).
2. Add the cream cheese, Rotel, chicken broth, corn, and taco seasoning. (You can also add beans here if you prefer)
3. Stir everything together gently.
4. Cover and cook on high for about 2 hours, stirring occasionally if possible, until creamy and heated through.
5. Once finished, stir well and serve warm.
6. Top with shredded cheese and a dollop of Greek yogurt or sour cream, if desired.
