Using up the rest of my veggies for my salad today and randomly chose a cheese from the drawer. Didn’t realize what I had made til I was done! I hear the Japanese try to eat seven colors a day. If you count the pink and the purple radishes, I made it! ❤️🧡💛💚💙💜🩷 It’s so pretty!

In the home stretch!! 🍷🧀🥃

Here's some good news! We got our alcohol licenses late last week and will be placing our first wine orders this week. The furniture and shelving are also mostly in. So, we are targeting late this month to get the doors open on Cibon.

Since any establishment is only as good as the people who make up the business, I want to introduce you all to the engine that is running the show at Cibon.

General Manager Laura Conrow has been working in the cheese world for the better part of the past 30 years and is known to her devoted fans as “Queen Brie.” She owned an artisan cheese shop and artisan cheese truck in Nevada for 7 years and holds the title of Certified Cheese Professional®. You may remember her from Wine + Market or have enjoyed one or her popular Cheese Appreciation Classes or Raclette Dinners here in Lexington.

Over the coming weeks, we will be introducing more members of our impressive team of folks who know wine, bourbon, beer, cheese, fine foods and so many other things that make life just a little sweeter!

I rarely repost articles because it seems there’s always what I consider misinformation in them. But this was a really great article about a delicious cheese. Go find yourself some Mimolette somewhere! We have it at the Lexington Whole Foods. 🧡

Mimolette is an aged French cheese known for its bright orange paste, roughly spherical shape, and pitted natural rind. Mimolette is a very firm, sharp cheese with a flavor ranging from mild to sweet and sharp, depending on its age.
