I took a Silk Barre class with a 77 year old dance teacher @ Heart and Pole Studio yesterday. It was so fun!!
I haven’t posted in a while as I’ve been busy being well...you know working, sleeping, trying to eat well and get outside for fresh mountain air. Now that the days are getting longer and brighter I will be adding some classes. I will be changing my spin classes @ RIDE to every other Friday, Monday 30 min @ 7:00. Check out their schedule! I will also be adding a yoga sculpt class nearby soon. What other classes would you like to see? Paddle board yoga is on the list this summer!

Looking for something that will stick to your ribs and keep you full and satisfied? Try my Sweet potato, Red Lentil, green bean recipe. It is nutritious and delicious 😋



Sweet potato Lentil Stew with green beans

Ingredients:
1 large Vidalia onion
1 medium jalapeño
1 tsp grated ginger
1 tsp smoked paprika
1 tsp tumeric
1 tsp onion powder
1 tsp garlic powder
3 Tbs red curry paste
3 cloves diced garlic
3 C fresh green beans
4 large sweet potato
3 C red lentil
2 boxes vegetable broth
1 can full fat coconut milk
2 Tbs Olive oil
Optional: 2 Tbs maple syrup

Recipe:
Sauté diced onion, garlic, jalapeño in olive oil until translucent; add grated ginger sauté for 2 more min
Add diced sweet potato and seasonings and sauté 3-4 min until fragrant
Add 2 C vegetable broth and simmer potato until tender. Add maple syrup (optional)
Meanwhile dice green beans and cook in water until ala dente
Add red lentils to sweet potato and remaining broth, simmer until lentils are done. Take off heat, Add green beans and add coconut milk.
