One of the easiest recipes on my dinner list! Stuffed Turkey Taco Bell Peppers - YUM! 😍 As a new mom (👶🏼, I have a 2 month old) I have found it difficult to cook hearty, yet simple meals throughout the day as I get a handle on this motherhood thang. This recipe is filled with plenty of flavor and nutrients and is quite satisfying.
Stuffed Turkey Taco Bell Peppers
Ingredients:
▫️ 4 bell peppers, seeded
▫️1 tablespoon extra virgin olive oil
▫️1 pound lean ground turkey
▫️1/2 cup diced yellow onion
▫️1 (1oz) packet low sodium taco seasoning (I love taco seasoning!)
▫️1 cup black beans, rinsed and drained
▫️1/2 cup shredded cheese
▫️ 2 avocados, pitted and diced
▫️Garnish: nonfat Greek yogurt (sub for sour cream for less fat)
Directions:
1️⃣Preheat oven to 400F and line a baking sheet with foil. Spray foil with cooking spray.
2️⃣ Cut the peppers in half (cut them lengthwise for more servings or the top off for a bigger serving) and remove core and seeds. Place the peppers in the baking sheet cut side up and sprinkle with salt. Bake for 15 minutes.
3️⃣ While the bell peppers are baking, cook the turkey. In a pan on medium to high heat, place olive oil, turkey and taco seasoning (add water according to packet ingredients) and cook for 5-8 minutes or until turkey is fully cooked. When the turkey is fully cooked, stir in black beans. Bring to a boil then reduce to simmer and cook for 8-10 more minutes.
4️⃣ Remove peppers from oven and pour out any excess liquid that gathered inside them then fill each pepper with ground turkey bean mixture. Top with cheese and cook in oven for 5 more minute or until cheese is melted.
5️⃣ Remove from oven and let cool for 5 minutes. Add. dollop of nonfat Greek yogurt and avocado pieces and enjoy!
