Tuscan Veggie Bean Soup with Toasted Ciabatta Bread⁠

Ingredients: ⁠

• red onion⁠
• celery⁠
• carrot⁠
• garlic⁠
• rustic herb spice blend⁠
• fennel seeds⁠
• red kidney beans⁠
• diced tomatoes with garlic & olive oil⁠
• vegetable stock⁠
• baby spinach leaves⁠
• chilli flakes⁠

Instructions:⁠

1. Finely chop the red onion, celery and garlic. Cut carrots in half moons.⁠

2. In a large pan, add the onion, carrot and celery and cook, stirring occasionally, until softened, 5 minutes. Add the garlic, rustic herb spice blend, a pinch of fennel seeds and a pinch of chilli flakes. Stir for 2-3 minutes.⁠

3. Add the red kidney beans and the diced tomatoes with garlic & olive oil and the water. Crumble in the vegetable stock cubes. Mix and stir. Let it simmer until soft.⁠

4. Add the spinach leaves and let it wilt a bit, just before serving.⁠

YUM!!! So perfect for this cooold weather.⁠

These are some beautiful spinach blueberry pancakes by on Instagram!!

They are full of flavor and are so incredibly fluffy! They're a great nutritious breakfast and so simple to make! :)

Serves 2-4 people
225g of flour (1 cup)
350ml plant-based milk (1 1/4 cup)
25g of fresh spinach
50 g of sliced blueberries
1 tsp of baking soda
1 tsp of baking powder
1 tbsp of vanilla extract
1/2 tsp of salt

In a food processor or blender, add the spinach and milk and blend until smooth. You can additionally add a frozen or ripe banana for a sweeter pancake.

In a mixing bowl, add the remaining ingredients and whisk until the batter is thick but pourable. If too thick, add a small splash of water to help loosen the batter.

Pour the batter into a non-stick frying pan on medium-high heat. Add sliced blueberries to the tops of the pancake. Allow the bubbles to cook through the batter for 60-90 seconds. Flip and cook on the other side for one minute.

Tip: Do not flatten the pancake, allow it to rise to have a nice, fluffy pancake.

you can top the pancake with whatever you like, more fresh blueberries, coconut yogurt, pumpkin seeds, and maybe even a drizzle of maple syrup!!

There are around 7 billion people on this planet, 3-4 billion of them get their periods, so here’s the truth about traditional period products.

I was truly shocked when I heard the truth about traditional period products. So I’ve been using reusable pads for about a year now, and recently switched over to menstrual cups, something I recommend to everyone with a period.

I had a friend who was so disgusted by their discharge they wore pantiliners every single day. When I tried telling them the impact it had on the environment, not to mention how it can irregulate their discharge; I got shot down and was told reusable pads are ‘unsanitary’ which is totally untrue. After that conversation I was inspired to make a post sharing the truth, hopefully you can learn something and help make an impact.

How to be more helpful towards the environment!

Summed up in 6 short points!!

1. Cut out plastic - Plastic has found a way into every aspect of our lives, and has now even infiltrated into our food! Cutting our plastic is not as difficult as you think, bring a canvas bag when you go grocery shopping, don’t buy your products wrapped in plastic, and give up bottled water.

2. Recycle everything - recycling is a quick and easy way to use less plastic, chances are, if you’re thinking of living a more environmentally friendly life, you’re already recycling! You can recycle almost everything, from cardboard boxes to plastic containers. Before you throw it in the trash, think about whether you can recycle it or not.

3. Don't waste food - wasting food can be a part of your everyday life and you may not even realize it. Food waste adds to the amount of CO2 being created in landfills

4. Use LED light bulbs - Not only do these bulbs last longer, but they are also more efficient! You’ll be using less power and won’t have to do as much work when changing bulbs, it's a win-win!

5. Don't drive - if you can make the journey by foot, bike, or public transport, take the opportunity. Although in these trying times it may be harder to use public transport. So be sure to be safe!!

6. Grow your own produce - There are so many benefits to this, first of all, it's a great way to save money and cut down your eco-footprint, second of all, now all your products will be organic and all-natural!!

Falafel Yo!⁠

If you’re looking for a good healthy, vegan meal Falafel Yo is a great place to go!⁠

The first time I was introduced to Falafel Yo was at SM North, I was walking by and the heavenly smells drew me in. My dad, my sister, and I got some falafel and ate it in the car, it was by far the best vegan food we had eaten outside of our house. We’ve been going back ever since.⁠

My family and I ordered some for my birthday back in May, we also ordered their delicious pita chips. The menu has a variety of choices, you can get something spicy, or something not spicy at all, either way, you can’t go wrong.⁠

My personal favorite is the ‘Ouchy Ouchy!’, which is the perfect spicy twist of the beloved falafel sandwich. This one has 4 Falafel Balls, spicy cauliflower, honey, hot sauce, and tahini. The texture of the crunchy falafel goes hand in hand with soft pita bread. The sauce sums it up very well, you can go off with a great finish by drizzling the sauce and taking a bite of the pepper.⁠

And if spice isn't your thing, the 'Falafel YO' is one among other options for you to choose. This is a great one, with 5 Falafel Balls, white cabbage, onion sumac, fried eggplant, chopped salad, Hummus, and green chili. Drizzled with Tahini and Amba Sauce.⁠
