Not sure what to eat for lunch or dinner? Here is a quick salad idea: spinach bed, organic free range chicken, sliced cucumbers, sliced peppers, shredded carrots, organic pepitas. Drizzle some olive oil, balsamic vinegar and that’s it.

Snap Pea and Soba Noodles Salad!!!
This is a healthy, vibrant vegan noodle recipe full of fresh produce. Feel free to trade in other seasonal vegetables for the sugar snap peas, like carrots or bell peppers.

Ingredients:
Noodles
6 ounces soba noodles
2 cups frozen organic edamame
About 3 cups of snow or sugar snap peas
3-6 medium shredded carrots or peppers
1/2 cup fresh cilantro (for garnish)
1/4 cup sesame seeds (for garnish)

Ginger- sesame seeds sauce
1/4 cup coconut aminos or soy sauce
2 Tbsp peanut oil or olive oil
1 small lime
1 Tbsp sesame oil
1 Tbsp miso
2 Tsp freshly grated ginger
1 Tsp chili garlic sauce or sriracha

Mix together all of the sauce ingredients. Cook soba noodles according to package directions. Toss in the veggies with the noodles and pour the sauce over.

This West African-inspired peanut soup recipe is a creamy and comforting vegan soup. Made with a simple combination of vegetable broth, peanut butter, tomato paste and collard greens or kale, this soup comes together quickly and it would be a great weeknight meal.

Ingredients:
4 cups vegetable broth
2 cups water
1 medium red onion, chopped
2 Tbsp of ginger
4 cloves garlic
1 Tsp salt
1 bunch of kale or collard greens
3/4 cups unsalted peanut butter
1/2 cup tomato paste
Hot sauce
1/4 cup chopped peanuts for garnish
Brown rice (optional)

Combine broth, water, onion, garlic, ginger and salt. In a separate bowl mix peanut butter and tomato paste. Pour the peanut mixture into the broth. Add kale and season with hot sauce, salt and pepper to taste.

Let’s just stick to some fresh homemade bruschetta.
Chop some fresh organic tomatoes, throw in some kalamata olives and capers, drizzle olive oil and balsamic vinegar, add a little bit of salt and pepper and Voila!!!
