Sharing this as a warm hug 🤗 to everyone. The best beef stew and best part made in the instant pot. I feel like this dish is so underrated. Budget friendly and flavor packed. All you need are some simple ingredients and you have yourself a nourishing delicious meal the whole family will love.
Highly recommend making a double batch !
2 lbs beef stew meat
Salt and pepper
1/2 cup GF flour
2 tbsp olive oil
1 cup chopped carrots and onions
2 tbsp tomato paste
Handful fresh herbs- rosemary, thyme , sage
6 whole garlic cloves
1 cup red wine
1 cup beef bone broth
1 small bag baby potatoes
1 Parmesan rind
1 tsp fish sauce for finishing
Season beef with salt and pepper. Dredge in flour aand shake off excess. Sear in instant pot on all sides. Remove and place in a bowl. Add olive oil to instant pot and add carrots and onion cook for 2-3 minutes until they begin to soften . Add tomato paste and cook for 3-4 minutes until it becomes dark red, deglaze the pan with wine. Add broth, potatoes, herbs , rind and garlic cloves . Seal instant pot and cook on manual for 50 minutes. Release steam, remove herb stems and rind. If you want to thicken sauce remove meat/veg from the pan and cook over medium until reduced by 1/2 and finish with fish sauce.
