Had a very introspective and chill evening flowing back into cooking and creating a flavor bomb of a dinner. πŸ˜‹Organic Chicken with shallots, garlic, baby peppers, Campari tomatoes, zucchini, butternut squash zigzags, fresh thyme, extra virgin olive oil, lots of herbs and spices-Very French/Italian flavors, which I grew up with. What do I meal prep when I need to get more protein in??? Mediterranean Herby Chicken with Garlic Balsamic Mushrooms & Yellow Squash. Served with vegan tzatziki from & a cassava wrap and a lil jasmine rice. I used Greek herbs, oregano, a green goddess blend I have, a lil Himalayan pink salt, cracked pepper, Braggs Aminos and extra virgin olive oil for seasoning. All organic, all gluten-free, all yummy! πŸ˜‹πŸ˜˜πŸ‘Œ
